制作方式
燒(shao)(shao)(shao)鍋(guo)(guo)子一(yi)般選用亡好(hao)(hao)小(xiao)(xiao)麥面(mian)(mian)(mian)(mian)(mian)(mian)制(zhi)作(zuo),若用秦王川砂地小(xiao)(xiao)麥面(mian)(mian)(mian)(mian)(mian)(mian),則風味更(geng)佳(jia)。做燒(shao)(shao)(shao)鍋(guo)(guo)子先用溫水把(ba)一(yi)塊發面(mian)(mian)(mian)(mian)(mian)(mian)浸泡成(cheng)(cheng)(cheng)糊,倒進面(mian)(mian)(mian)(mian)(mian)(mian)里(li),然后(hou)(hou)加水攪和(he)(he),把(ba)面(mian)(mian)(mian)(mian)(mian)(mian)揉和(he)(he)均勻,軟硬適度后(hou)(hou),置于盆(pen)中,捂蓋嚴實,放置溫暖的(de)炕頭(tou)或陽光下,使其發酵。待面(mian)(mian)(mian)(mian)(mian)(mian)發好(hao)(hao),再摻和(he)(he)少(shao)量干(gan)面(mian)(mian)(mian)(mian)(mian)(mian),兌(dui)人(ren)適量的(de)蓬灰(或堿)水,揉勻,去其酸味。揉好(hao)(hao)后(hou)(hou),切成(cheng)(cheng)(cheng)大小(xiao)(xiao)適宜的(de)面(mian)(mian)(mian)(mian)(mian)(mian)團,揉和(he)(he)成(cheng)(cheng)(cheng)形,裝進燒(shao)(shao)(shao)鍋(guo)(guo),在上面(mian)(mian)(mian)(mian)(mian)(mian)打(da)菱形刀花(hua),蓋上頂蓋,埋(mai)進燒(shao)(shao)(shao)旺(wang)的(de)火堆內。煨火堆的(de)燃料多(duo)為(wei)(wei)騾馬糞,以羊糞最佳(jia)。20多(duo)分(fen)鐘起鍋(guo)(guo),一(yi)個皮色黃亮,外脆里(li)暄的(de)燒(shao)(shao)(shao)鍋(guo)(guo)子便做成(cheng)(cheng)(cheng)了。這(zhe)是制(zhi)作(zuo)最簡易、最常吃的(de)一(yi)種。若專為(wei)(wei)串(chuan)親戚、探月子、看(kan)病人(ren)做的(de)燒(shao)(shao)(shao)鍋(guo)(guo)子就更(geng)為(wei)(wei)講究,要在發面(mian)(mian)(mian)(mian)(mian)(mian)中兌(dui)和(he)(he)花(hua)椒和(he)(he)小(xiao)(xiao)茴香(xiang)水,把(ba)發面(mian)(mian)(mian)(mian)(mian)(mian)搟薄,在上面(mian)(mian)(mian)(mian)(mian)(mian)涂抹(mo)清(qing)油,撒上苦豆(dou)或花(hua)椒葉末,卷成(cheng)(cheng)(cheng)小(xiao)(xiao)口杯粗細的(de)圓柱體,橫切成(cheng)(cheng)(cheng)三(san)寸許(xu)的(de)小(xiao)(xiao)段(duan),之后(hou)(hou)用六個面(mian)(mian)(mian)(mian)(mian)(mian)段(duan)豎立組連成(cheng)(cheng)(cheng)一(yi)體,裝人(ren)燒(shao)(shao)(shao)鍋(guo)(guo)內燒(shao)(shao)(shao)烤。這(zhe)樣做出的(de)燒(shao)(shao)(shao)鍋(guo)(guo)子,猶如重瓣蓮花(hua),好(hao)(hao)看(kan)好(hao)(hao)吃,味道更(geng)為(wei)(wei)醇香(xiang)濃郁(yu)。若看(kan)月子,娘家(jia)人(ren)和(he)(he)親戚們(men)一(yi)定不(bu)會忘記在面(mian)(mian)(mian)(mian)(mian)(mian)里(li)加兌(dui)紅(hong)(hong)花(hua)水,卷上紅(hong)(hong)花(hua)絲兒(er)。“月婆子”吃了這(zhe)香(xiang)味十足的(de)燒(shao)(shao)(shao)鍋(guo)(guo)子,不(bu)但可以補養身子,而且(qie)可以化瘀、活血、通(tong)經(jing)。故而永登有“發白面(mian)(mian)(mian)(mian)(mian)(mian)、摘紅(hong)(hong)花(hua),做個燒(shao)(shao)(shao)鍋(guo)(guo)子去姐(jie)(jie)(jie)姐(jie)(jie)(jie)家(jia)。姐(jie)(jie)(jie)姐(jie)(jie)(jie)家(jia)里(li)干(gan)什么?姐(jie)(jie)(jie)姐(jie)(jie)(jie)生(sheng)了外甥娃……”的(de)童謠。
制作容器
加工燒(shao)(shao)鍋(guo)(guo)子的(de)(de)工具為高約5寸(cun),直徑(jing)6寸(cun)許的(de)(de)上下(xia)兩合鑄鐵(tie)小(xiao)鍋(guo)(guo),上蓋頂部拱形,外有提紐(niu),下(xia)底(di)平(ping)展,合縫間(jian)有重沿(yan)“子扣”,疊(die)蓋十(shi)分嚴實,灰(hui)土纖塵不(bu)(bu)能(neng)鉆人里面(mian)。舊(jiu)時,一些農家(jia)買不(bu)(bu)起(qi)鑄鐵(tie)燒(shao)(shao)鍋(guo)(guo),聰明的(de)(de)農婦,就用(yong)一片光滑的(de)(de)小(xiao)石板(ban)(ban)做底(di),上面(mian)涂抹清油,放上面(mian)團,上面(mian)扣一個小(xiao)砂鍋(guo)(guo),同樣(yang)可以燒(shao)(shao)烤出(chu)味美可口(kou)的(de)(de)燒(shao)(shao)鍋(guo)(guo)子來,用(yong)石板(ban)(ban)沙(sha)鍋(guo)(guo)烤燒(shao)(shao)鍋(guo)(guo)子的(de)(de)時代早已過去,如今永登農家(jia)除(chu)普遍使(shi)用(yong)鑄鐵(tie)鍋(guo)(guo)外,時下(xia)興用(yong)傳熱快、導熱均勻(yun)的(de)(de)鋁制燒(shao)(shao)鍋(guo)(guo)。鋁鍋(guo)(guo)用(yong)起(qi)來省燃(ran)料、省時間(jian),更(geng)受農民(min)歡迎。
