豆(dou)沙八寶飯是浙(zhe)江寧波(bo)的(de)傳統名點(dian),用糯米(mi)(mi)做成的(de)美食。由(you)(you)糯米(mi)(mi)、豆(dou)沙、棗(zao)泥、果脯(fu)、蓮心、米(mi)(mi)仁、桂圓、白糖、豬板油等原(yuan)(yuan)料配合制成。它由(you)(you)8種原(yuan)(yuan)料組成,不僅營養豐(feng)富,延(yan)壽益(yi)年,且醇香甜蜜,別有(you)風味。
糯(nuo)米(mi)補(bu)中(zhong)益氣,豇豆(dou)有(you)(you)“補(bu)腎豆(dou)”之稱;棗泥(ni)有(you)(you)調(diao)和百藥之功(gong)(gong)效,對人的健康長(chang)壽極有(you)(you)裨益;蓮心有(you)(you)強心作用(yong)(yong),米(mi)仁有(you)(you)健脾補(bu)肺(fei)的功(gong)(gong)效,桂圓(yuan)則是(shi)(shi)人所(suo)共(gong)知具有(you)(you)補(bu)中(zhong)益氣作用(yong)(yong)。制作豆(dou)沙(sha)八寶飯(fan)(fan)工序十分講究(jiu)。先要把豇頭(tou)掏洗(xi)干凈后煮(zhu)熟(shu)搗爛去豆(dou)皮,加豬(zhu)油(you)白糖(tang),炒至水份將干時備用(yong)(yong);把糯(nuo)米(mi)淘洗(xi)干凈后煮(zhu)至軟硬適中(zhong),趁熱拌上豬(zhu)油(you)和糖(tang)。盛八寶飯(fan)(fan)的碗內(nei)(nei)要先抹上一層冷凝(ning)的豬(zhu)油(you),使之勿粘于碗,然(ran)后排入各色花(hua)樣(yang),豆(dou)沙(sha)加在(zai)(zai)中(zhong)間,再覆(fu)上糯(nuo)米(mi)飯(fan)(fan)。這樣(yang),豆(dou)沙(sha)八寶飯(fan)(fan)就(jiu)做(zuo)成(cheng)了。在(zai)(zai)冰箱內(nei)(nei)可以(yi)放置數日(ri)而不(bu)變質(zhi)。豆(dou)沙(sha)八寶飯(fan)(fan)在(zai)(zai)食用(yong)(yong)前,須蒸熟(shu)后扣在(zai)(zai)大盆(pen)中(zhong),便可食用(yong)(yong)。其特點是(shi)(shi),五彩(cai)繽(bin)紛,綿糯(nuo)油(you)潤,八寶多(duo)味、甜香(xiang)可口。八寶飯(fan)(fan)還(huan)含有(you)(you)多(duo)種(zhong)維(wei)生素、脂(zhi)肪、糖(tang)類和無機鹽等營養成(cheng)分,是(shi)(shi)人們十分喜愛的點心。
將糯(nuo)米蒸熟(shu)后(hou),與白(bai)糖、豬油和開(kai)水和勻。
蜜棗等放入(ru)碗(wan)內時(shi),排(pai)列成圖案,中間豆沙及桂花,再鋪上糯米飯,塌(ta)平,入(ru)上籠蒸一小時(shi),食時(shi)鏟出。
