梅菉麻(ma)通是吳川(chuan)糖(tang)果(guo)生產中(zhong)的獨特(te)名優產品(pin),該(gai)產品(pin)系(xi)用(yong)(yong)大糯(nuo)米、水芋頭(tou)、白糖(tang)、芝麻(ma)等(deng)原(yuan)料,經(jing)過(guo)特(te)殊 的處理(li)方法和(he)制(zhi)(zhi)(zhi)作(zuo)技術做成半成品(pin),曬干后(hou)隨時(shi)備用(yong)(yong)。再(zai)加工制(zhi)(zhi)(zhi)作(zuo)時(shi),將此半成品(pin)先后(hou)投進分(fen)別用(yong)(yong)文武火煮成不同溫度(du)的兩(liang)個油鍋中(zhong)去炸,炸至(zhi)膨脹適度(du),取出淋上白糖(tang)膠(jiao),灑上芝麻(ma)即成。成品(pin)粗如甘蔗,長7~8公分(fen),中(zhong)空充滿泡沫,入口松脆(cui)香甜,是糖(tang)果(guo)中(zhong)佳品(pin)。麻(ma)通的制(zhi)(zhi)(zhi)作(zuo),在吳川(chuan)已有一(yi)百多年歷史,但(dan)其制(zhi)(zhi)(zhi)作(zuo)技術秘傳(chuan),直(zhi)至(zhi)60年代(dai)才公開。
吳川(chuan)獨(du)有(you)(you)的風味(wei)小(xiao)(xiao)食麻通(tong)(tong)形似香蕉,色澤金(jin)黃,入口(kou)(kou)酥脆,咀(ju)嚼(jiao)無渣,香甜可口(kou)(kou),是吳川(chuan)傳統的小(xiao)(xiao)食,在清朝已(yi)有(you)(you)制(zhi)作。麻通(tong)(tong)是梅錄頭(tou)老(lao)人陳(chen)華堂的絕藝,只(zhi)有(you)(you)陳(chen)氏一家懂得(de)制(zhi)作。制(zhi)作麻通(tong)(tong)要(yao)精選香膠糯米,用人工(gong)搗(dao)成(cheng)粉,再經炊、曬、火局、炸等工(gong)序,前后歷(li)時十五日才能(neng)制(zhi)成(cheng)。由于選料難、工(gong)序多、制(zhi)作復雜(za)、利潤薄,陳(chen)家停(ting)止制(zhi)作麻通(tong)(tong)已(yi)有(you)(you)幾十年。后來有(you)(you)關部門的熱心動員下,陳(chen)家決定(ding)重(zhong)操舊業,讓(rang)麻通(tong)(tong)這一吳川(chuan)風味(wei)小(xiao)(xiao)食重(zhong)出江湖,并在吳川(chuan)市第三屆美食節(jie)上呈(cheng)獻(xian)出來,讓(rang)廣大市民品嘗到(dao)風味(wei)獨(du)特的吳川(chuan)傳統小(xiao)(xiao)食。在美食節(jie)上麻通(tong)(tong)的美味(wei)受到(dao)廣泛(fan)的好評。吳川(chuan)市土特產專賣店有(you)(you)麻通(tong)(tong)出售。
