面(mian)粉,清油,雞蛋,牛奶(可(ke)不要(yao)),白砂糖(tang),紅糖(tang),小蘇打。(客家用料:面(mian)粉,白砂糖(tang),番(fan)薯(可(ke)不要(yao)),簡(jian)稱番(fan)薯油果)
1.發面(mian):頭(tou)一天先把(ba)雞蛋(雞蛋越(yue)多(duo),會使果(guo)(guo)做出來的果(guo)(guo)子越(yue)脆(cui))加(jia)入面(mian)粉和(he)成面(mian)團(tuan)放置在(zai)比(bi)較暖和(he)的地方,使面(mian)能發起,面(mian)的面(mian)積膨大(da)到一倍就好(hao)了(le)。加(jia)入堿水揉(rou)勻。
2.和面(mian)(mian)(mian)(mian):(1)先取一個盆放(fang)(fang)入(ru)(ru)面(mian)(mian)(mian)(mian)粉里(li)面(mian)(mian)(mian)(mian)放(fang)(fang)雞蛋、牛奶、白糖、小(xiao)蘇(su)打和成白色(se)硬(ying)面(mian)(mian)(mian)(mian)團,蓋上布(bu)(bu)在(zai)暖(nuan)氣(qi)邊(bian)(bian)放(fang)(fang)置(zhi)(zhi)。(2)在(zai)取一盆放(fang)(fang)入(ru)(ru)面(mian)(mian)(mian)(mian)粉,將雞蛋打入(ru)(ru)然后把摻了紅糖、蜂蜜(mi)的(de)(de)牛奶倒入(ru)(ru)面(mian)(mian)(mian)(mian)粉里(li)和成黑(hei)色(se)硬(ying)面(mian)(mian)(mian)(mian)團,不要(yao)忘了放(fang)(fang)小(xiao)蘇(su)打(一點就行)蓋上布(bu)(bu)在(zai)暖(nuan)和的(de)(de)地方(fang)放(fang)(fang)置(zhi)(zhi)。(3)在(zai)取一盆放(fang)(fang)入(ru)(ru)少量面(mian)(mian)(mian)(mian)粉把熬(ao)好的(de)(de)熟油倒進去和成油酥面(mian)(mian)(mian)(mian),(4)取一點發面(mian)(mian)(mian)(mian)和油酥面(mian)(mian)(mian)(mian)和白色(se)硬(ying)面(mian)(mian)(mian)(mian)團一起揉勻分(fen)成若干小(xiao)塊蓋上布(bu)(bu)在(zai)暖(nuan)氣(qi)邊(bian)(bian)放(fang)(fang)置(zhi)(zhi)。(5)取一點發面(mian)(mian)(mian)(mian)和油酥面(mian)(mian)(mian)(mian)和黑(hei)色(se)硬(ying)面(mian)(mian)(mian)(mian)團一起揉勻分(fen)成若干小(xiao)塊蓋上布(bu)(bu)在(zai)暖(nuan)氣(qi)邊(bian)(bian)放(fang)(fang)置(zhi)(zhi)。
3.搟(xian)面(mian):取(qu)兩塊白色面(mian)團(tuan)用大(da)搟(xian)面(mian)杖把面(mian)團(tuan)搟(xian)成面(mian)片,在把黑(hei)色面(mian)團(tuan)也搟(xian)開(kai)。
4.在白面片上(shang)(shang)刷(shua)上(shang)(shang)水把黑(hei)面片放在上(shang)(shang)面,在刷(shua)上(shang)(shang)水把白面片放在上(shang)(shang)面。就(jiu)是中間是黑(hei)色的上(shang)(shang)下是白色的,然(ran)后(hou)用刀(dao)切成長(chang)條狀,幾個長(chang)條上(shang)(shang)下堆放,在中間用刀(dao)拉幾道(dao)口子(zi),做成花式(shi)果(guo)(guo)子(zi)。下油鍋炸,要密(mi)切注意火候(hou),不然(ran)果(guo)(guo)子(zi)會被炸黑(hei)的。一般(ban)第一盤(pan)果(guo)(guo)子(zi)很(hen)可能會炸黑(hei),以后(hou)就(jiu)有(you)經驗了。出鍋之后(hou)可以撒(sa)點兒糖,非常(chang)爽口。
選米,一般糯米為佳,做出來(lai)口感(gan)軟糯香甜 ②將(jiang)谷子(zi)輾成(cheng)米粒后磨成(cheng)粉(fen) ③熬(ao)制白糖水與(yu)米粉(fen)和勻(yun)(番薯油果可(ke)不(bu)加糖)④將(jiang)和好的面捏成(cheng)圓球,進行油炸。(客家做法)
提示:油果子(zi)花樣繁多,可根據自己喜好捏(nie)。
