新興園蒸餃,是吉林省吉林市的著名特色小吃之一。新興園蒸餃制作原料主要有精粉、豬肉、青菜、精鹽、味精、蔥花、姜末、醬油、豬油、芝麻油、花椒面等。餃子外型美觀,個頭均勻,皮薄發亮,滋味鮮美,食時配上一碗清湯,很受食客的歡迎。新興園蒸餃在1997年被中國烹飪協會評為“中華名小吃”。

基本介紹

吉林的主食風味,被人們稱道的是新興園蒸餃,筱筱火勺和會友發包子。河南街新興園元籠蒸餃久負盛名,迄今已有近70年的歷史。餃子外型美觀,個頭均勻,皮薄發亮、筋道、鹵汁多,滋味鮮美,食時配上一碗清湯,很受顧客歡迎。現已列入吉林面點譜。

餃(jiao)(jiao)(jiao)(jiao)(jiao)子(zi)(zi)(zi)外型美(mei)觀,個頭均(jun)勻(yun),皮(pi)(pi)(pi)薄發(fa)亮、筋道(dao)、鹵汁多,滋味鮮美(mei),食時配上(shang)一(yi)碗(wan)清湯(tang),很受顧客歡迎。現(xian)已列入吉(ji)林面點(dian)譜(pu)。新(xin)(xin)(xin)(xin)興(xing)(xing)(xing)園(yuan)的(de)(de)(de)(de)歷史沿(yan)革1894年:董(dong)世昌(chang)開(kai)辦(ban)一(yi)家(jia)(jia)小飯(fan)(fan)館(guan)(guan),叫董(dong)家(jia)(jia)飯(fan)(fan)鋪。1901年:董(dong)世昌(chang)將王(wang)(wang)兆(zhao)(zhao)(zhao)元、王(wang)(wang)兆(zhao)(zhao)(zhao)吉(ji)挖到(dao)他(ta)的(de)(de)(de)(de)飯(fan)(fan)店(dian)(dian)(dian)(dian)(dian)(dian)。王(wang)(wang)家(jia)(jia)哥倆把在(zai)(zai)(zai)山東學會的(de)(de)(de)(de)圓籠(long)蒸(zheng)(zheng)(zheng)餃(jiao)(jiao)(jiao)(jiao)(jiao)引入該店(dian)(dian)(dian)(dian)(dian)(dian)。當(dang)(dang)時的(de)(de)(de)(de)餃(jiao)(jiao)(jiao)(jiao)(jiao)子(zi)(zi)(zi)館(guan)(guan)是(shi)(shi)吉(ji)林非常有名(ming)(ming)的(de)(de)(de)(de)飯(fan)(fan)店(dian)(dian)(dian)(dian)(dian)(dian)之(zhi)一(yi),俗稱(cheng)(cheng)(cheng)(cheng)王(wang)(wang)家(jia)(jia)餃(jiao)(jiao)(jiao)(jiao)(jiao)子(zi)(zi)(zi)館(guan)(guan)。1920年:王(wang)(wang)兆(zhao)(zhao)(zhao)元、王(wang)(wang)兆(zhao)(zhao)(zhao)吉(ji)哥倆接管(guan)(guan)了(le)飯(fan)(fan)店(dian)(dian)(dian)(dian)(dian)(dian),在(zai)(zai)(zai)河(he)南街西(xi)段(duan)租用三(san)間門市,取名(ming)(ming)為(wei)(wei)"天(tian)怡興(xing)(xing)(xing)",以經營蒸(zheng)(zheng)(zheng)餃(jiao)(jiao)(jiao)(jiao)(jiao)、醬肉為(wei)(wei)主。兩(liang)兄(xiong)(xiong)弟(di)不(bu)斷創新(xin)(xin)(xin)(xin)餃(jiao)(jiao)(jiao)(jiao)(jiao)子(zi)(zi)(zi)制(zhi)作工(gong)藝(yi),研制(zhi)了(le)搟皮(pi)(pi)(pi)新(xin)(xin)(xin)(xin)工(gong)藝(yi),三(san)下一(yi)個皮(pi)(pi)(pi),搟的(de)(de)(de)(de)餃(jiao)(jiao)(jiao)(jiao)(jiao)子(zi)(zi)(zi)皮(pi)(pi)(pi)皮(pi)(pi)(pi)薄均(jun)勻(yun)不(bu)硬心,被(bei)稱(cheng)(cheng)(cheng)(cheng)為(wei)(wei)一(yi)絕。1935年:"天(tian)怡興(xing)(xing)(xing)"飯(fan)(fan)店(dian)(dian)(dian)(dian)(dian)(dian)擴建新(xin)(xin)(xin)(xin)店(dian)(dian)(dian)(dian)(dian)(dian),由河(he)南街的(de)(de)(de)(de)西(xi)頭搬(ban)到(dao)了(le)現(xian)在(zai)(zai)(zai)的(de)(de)(de)(de)東頭道(dao)北,店(dian)(dian)(dian)(dian)(dian)(dian)址(zhi)就(jiu)是(shi)(shi)現(xian)在(zai)(zai)(zai)的(de)(de)(de)(de)位置(zhi)。由當(dang)(dang)時的(de)(de)(de)(de)著名(ming)(ming)廚師(shi)韓(han)鈺(yu)(yu)掌(zhang)勺,主要經營圓籠(long)蒸(zheng)(zheng)(zheng)餃(jiao)(jiao)(jiao)(jiao)(jiao),增(zeng)添了(le)熘炒菜,包(bao)辦(ban)酒席,店(dian)(dian)(dian)(dian)(dian)(dian)號(hao)(hao)以韓(han)鈺(yu)(yu)的(de)(de)(de)(de)鈺(yu)(yu)字為(wei)(wei)名(ming)(ming),從此(ci)"天(tian)怡興(xing)(xing)(xing)"改為(wei)(wei)"天(tian)鈺(yu)(yu)興(xing)(xing)(xing)"。1948年:吉(ji)林解放,當(dang)(dang)時的(de)(de)(de)(de)商(shang)會派曲韻(yun)芝(zhi)、楊長(chang)興(xing)(xing)(xing)到(dao)"天(tian)鈺(yu)(yu)興(xing)(xing)(xing)"飯(fan)(fan)店(dian)(dian)(dian)(dian)(dian)(dian)工(gong)作,推曲韻(yun)芝(zhi)為(wei)(wei)經理(其丈夫是(shi)(shi)王(wang)(wang)氏兄(xiong)(xiong)弟(di)的(de)(de)(de)(de)伙計),特聘(pin)老掌(zhang)柜王(wang)(wang)兆(zhao)(zhao)(zhao)元參與企(qi)業的(de)(de)(de)(de)質量管(guan)(guan)理。1950年:在(zai)(zai)(zai)原"天(tian)鈺(yu)(yu)興(xing)(xing)(xing)"飯(fan)(fan)店(dian)(dian)(dian)(dian)(dian)(dian)基礎上(shang),在(zai)(zai)(zai)原址(zhi)重新(xin)(xin)(xin)(xin)開(kai)辦(ban)餃(jiao)(jiao)(jiao)(jiao)(jiao)子(zi)(zi)(zi)館(guan)(guan),取店(dian)(dian)(dian)(dian)(dian)(dian)號(hao)(hao)"新(xin)(xin)(xin)(xin)興(xing)(xing)(xing)園(yuan)"。1956年:市政府批準公(gong)私合營,新(xin)(xin)(xin)(xin)興(xing)(xing)(xing)園(yuan)餃(jiao)(jiao)(jiao)(jiao)(jiao)子(zi)(zi)(zi)館(guan)(guan)合并(bing)到(dao)市飲食服務(wu)公(gong)司(si)江(jiang)城(cheng)(cheng)飯(fan)(fan)店(dian)(dian)(dian)(dian)(dian)(dian)。在(zai)(zai)(zai)此(ci)期(qi)間,店(dian)(dian)(dian)(dian)(dian)(dian)名(ming)(ming)曾一(yi)度改為(wei)(wei)河(he)南街餃(jiao)(jiao)(jiao)(jiao)(jiao)子(zi)(zi)(zi)館(guan)(guan)(經營位置(zhi)未變)。1962年:市飲食服務(wu)公(gong)司(si)為(wei)(wei)了(le)保持王(wang)(wang)家(jia)(jia)餃(jiao)(jiao)(jiao)(jiao)(jiao)子(zi)(zi)(zi)館(guan)(guan)這一(yi)傳(chuan)統品種,將新(xin)(xin)(xin)(xin)興(xing)(xing)(xing)園(yuan)餃(jiao)(jiao)(jiao)(jiao)(jiao)子(zi)(zi)(zi)館(guan)(guan)從江(jiang)城(cheng)(cheng)飯(fan)(fan)店(dian)(dian)(dian)(dian)(dian)(dian)中(zhong)分離出來,成立獨立的(de)(de)(de)(de)經營單位。1989年:新(xin)(xin)(xin)(xin)興(xing)(xing)(xing)園(yuan)蒸(zheng)(zheng)(zheng)餃(jiao)(jiao)(jiao)(jiao)(jiao)獲(huo)商(shang)業部(bu)"金鼎獎"稱(cheng)(cheng)(cheng)(cheng)號(hao)(hao)。1997年:獲(huo)中(zhong)國(guo)烹協"中(zhong)華名(ming)(ming)小吃"稱(cheng)(cheng)(cheng)(cheng)號(hao)(hao)。1999年:被(bei)省烹協授(shou)予"百年老字號(hao)(hao)"稱(cheng)(cheng)(cheng)(cheng)號(hao)(hao),吉(ji)菜名(ming)(ming)店(dian)(dian)(dian)(dian)(dian)(dian),餃(jiao)(jiao)(jiao)(jiao)(jiao)子(zi)(zi)(zi)宴獲(huo)吉(ji)菜名(ming)(ming)宴稱(cheng)(cheng)(cheng)(cheng)號(hao)(hao),獲(huo)國(guo)內貿易部(bu)中(zhong)國(guo)名(ming)(ming)點(dian)稱(cheng)(cheng)(cheng)(cheng)號(hao)(hao)。

制作方法

原料

醬油50克(ke)(ke),豬油25克(ke)(ke),芝麻油15克(ke)(ke),蔥花50克(ke)(ke),姜末7.5克(ke)(ke),味精(jing)(jing)1克(ke)(ke),花椒面D.5克(ke)(ke),精(jing)(jing)鹽1.5克(ke)(ke)。精(jing)(jing)粉(fen)500克(ke)(ke),豬肉250克(ke)(ke),青菜250克(ke)(ke)。

做法

1、將(jiang)豬(zhu)肉剁成(cheng)餡(xian),加(jia)入(ru)醬油、精(jing)鹽拌勻,再放(fang)入(ru)花(hua)椒(jiao)面(mian)、豬(zhu)油加(jia)入(ru)水向(xiang)一(yi)個方向(xiang)攪動,至攪勻為止,把青菜洗凈剁碎,擠凈水分,放(fang)在肉餡(xian)內加(jia)入(ru)味精(jing)、蔥花(hua)、姜末、芝麻(ma)油拌勻成(cheng)餡(xian)。

2、把精粉放在(zai)案板(ban)上用開水燙熟(shu)拌成(cheng)雪花狀,揉成(cheng)面團,揉勻搓成(cheng)長條,下成(cheng)50個劑(ji)子(zi),撒點干(gan)面按扁(bian),搟成(cheng)圓(yuan)形薄皮。

3、左手(shou)拿皮(pi)子,右手(shou)抹(mo)餡(xian),然后用手(shou)順餃(jiao)子皮(pi)邊,從右到左捏合在(zai)一(yi)起,做(zuo)成月牙形的(de)餃(jiao)子。

4、將餃(jiao)子擺(bai)在(zai)展內(nei)蒸10分鐘(zhong)左右即熟(shu)。
