吉林的主食風味,被人們稱道的是新興園蒸餃,筱筱火勺和會友發包子。河南街新興園元籠蒸餃久負盛名,迄今已有近70年的歷史。餃子外型美觀,個頭均勻,皮薄發亮、筋道、鹵汁多,滋味鮮美,食時配上一碗清湯,很受顧客歡迎。現已列入吉林面點譜。
餃子(zi)外型美觀,個頭(tou)均勻,皮薄發亮(liang)、筋道(dao)(dao)、鹵汁(zhi)多,滋味鮮美,食(shi)(shi)時配(pei)上(shang)一(yi)(yi)碗(wan)清湯,很受顧客歡(huan)迎。現已(yi)列入吉林(lin)(lin)面點(dian)譜。新(xin)興(xing)(xing)(xing)園(yuan)的(de)(de)(de)(de)(de)歷史沿革1894年(nian)(nian):董世(shi)昌開(kai)辦一(yi)(yi)家(jia)小飯(fan)(fan)館(guan)(guan),叫(jiao)董家(jia)飯(fan)(fan)鋪。1901年(nian)(nian):董世(shi)昌將王(wang)(wang)(wang)兆元(yuan)、王(wang)(wang)(wang)兆吉挖到(dao)他的(de)(de)(de)(de)(de)飯(fan)(fan)店(dian)(dian)(dian)。王(wang)(wang)(wang)家(jia)哥倆把(ba)在山東學(xue)會的(de)(de)(de)(de)(de)圓籠蒸餃引入該店(dian)(dian)(dian)。當(dang)(dang)時的(de)(de)(de)(de)(de)餃子(zi)館(guan)(guan)是吉林(lin)(lin)非常有名(ming)的(de)(de)(de)(de)(de)飯(fan)(fan)店(dian)(dian)(dian)之一(yi)(yi),俗稱(cheng)(cheng)王(wang)(wang)(wang)家(jia)餃子(zi)館(guan)(guan)。1920年(nian)(nian):王(wang)(wang)(wang)兆元(yuan)、王(wang)(wang)(wang)兆吉哥倆接管(guan)了飯(fan)(fan)店(dian)(dian)(dian),在河南(nan)(nan)街西段租用三間(jian)門市,取(qu)名(ming)為(wei)"天怡(yi)興(xing)(xing)(xing)",以經營蒸餃、醬(jiang)肉(rou)為(wei)主(zhu)。兩兄(xiong)弟不(bu)斷創新(xin)餃子(zi)制作(zuo)(zuo)工(gong)藝,研制了搟皮新(xin)工(gong)藝,三下一(yi)(yi)個皮,搟的(de)(de)(de)(de)(de)餃子(zi)皮皮薄均勻不(bu)硬心,被稱(cheng)(cheng)為(wei)一(yi)(yi)絕。1935年(nian)(nian):"天怡(yi)興(xing)(xing)(xing)"飯(fan)(fan)店(dian)(dian)(dian)擴(kuo)建(jian)新(xin)店(dian)(dian)(dian),由(you)河南(nan)(nan)街的(de)(de)(de)(de)(de)西頭(tou)搬到(dao)了現在的(de)(de)(de)(de)(de)東頭(tou)道(dao)(dao)北(bei),店(dian)(dian)(dian)址(zhi)就(jiu)是現在的(de)(de)(de)(de)(de)位置。由(you)當(dang)(dang)時的(de)(de)(de)(de)(de)著名(ming)廚師韓(han)鈺(yu)掌勺,主(zhu)要經營圓籠蒸餃,增添了熘炒菜(cai),包(bao)辦酒席,店(dian)(dian)(dian)號(hao)(hao)以韓(han)鈺(yu)的(de)(de)(de)(de)(de)鈺(yu)字(zi)為(wei)名(ming),從(cong)此(ci)"天怡(yi)興(xing)(xing)(xing)"改(gai)(gai)為(wei)"天鈺(yu)興(xing)(xing)(xing)"。1948年(nian)(nian):吉林(lin)(lin)解(jie)放,當(dang)(dang)時的(de)(de)(de)(de)(de)商會派曲韻芝(zhi)、楊長(chang)興(xing)(xing)(xing)到(dao)"天鈺(yu)興(xing)(xing)(xing)"飯(fan)(fan)店(dian)(dian)(dian)工(gong)作(zuo)(zuo),推曲韻芝(zhi)為(wei)經理(li)(其丈夫是王(wang)(wang)(wang)氏兄(xiong)弟的(de)(de)(de)(de)(de)伙計),特聘老(lao)掌柜(ju)王(wang)(wang)(wang)兆元(yuan)參與企(qi)業(ye)的(de)(de)(de)(de)(de)質(zhi)量(liang)管(guan)理(li)。1950年(nian)(nian):在原(yuan)(yuan)"天鈺(yu)興(xing)(xing)(xing)"飯(fan)(fan)店(dian)(dian)(dian)基礎上(shang),在原(yuan)(yuan)址(zhi)重(zhong)新(xin)開(kai)辦餃子(zi)館(guan)(guan),取(qu)店(dian)(dian)(dian)號(hao)(hao)"新(xin)興(xing)(xing)(xing)園(yuan)"。1956年(nian)(nian):市政府批準公私合(he)營,新(xin)興(xing)(xing)(xing)園(yuan)餃子(zi)館(guan)(guan)合(he)并到(dao)市飲食(shi)(shi)服(fu)(fu)務公司江城飯(fan)(fan)店(dian)(dian)(dian)。在此(ci)期間(jian),店(dian)(dian)(dian)名(ming)曾一(yi)(yi)度改(gai)(gai)為(wei)河南(nan)(nan)街餃子(zi)館(guan)(guan)(經營位置未變)。1962年(nian)(nian):市飲食(shi)(shi)服(fu)(fu)務公司為(wei)了保持王(wang)(wang)(wang)家(jia)餃子(zi)館(guan)(guan)這一(yi)(yi)傳統(tong)品種,將新(xin)興(xing)(xing)(xing)園(yuan)餃子(zi)館(guan)(guan)從(cong)江城飯(fan)(fan)店(dian)(dian)(dian)中(zhong)分離(li)出(chu)來,成立獨(du)立的(de)(de)(de)(de)(de)經營單位。1989年(nian)(nian):新(xin)興(xing)(xing)(xing)園(yuan)蒸餃獲(huo)(huo)商業(ye)部"金鼎獎(jiang)"稱(cheng)(cheng)號(hao)(hao)。1997年(nian)(nian):獲(huo)(huo)中(zhong)國烹協"中(zhong)華名(ming)小吃"稱(cheng)(cheng)號(hao)(hao)。1999年(nian)(nian):被省(sheng)烹協授(shou)予(yu)"百年(nian)(nian)老(lao)字(zi)號(hao)(hao)"稱(cheng)(cheng)號(hao)(hao),吉菜(cai)名(ming)店(dian)(dian)(dian),餃子(zi)宴獲(huo)(huo)吉菜(cai)名(ming)宴稱(cheng)(cheng)號(hao)(hao),獲(huo)(huo)國內貿易部中(zhong)國名(ming)點(dian)稱(cheng)(cheng)號(hao)(hao)。
醬油50克(ke)(ke)(ke)(ke),豬(zhu)油25克(ke)(ke)(ke)(ke),芝麻(ma)油15克(ke)(ke)(ke)(ke),蔥(cong)花(hua)50克(ke)(ke)(ke)(ke),姜末7.5克(ke)(ke)(ke)(ke),味精(jing)(jing)1克(ke)(ke)(ke)(ke),花(hua)椒面D.5克(ke)(ke)(ke)(ke),精(jing)(jing)鹽1.5克(ke)(ke)(ke)(ke)。精(jing)(jing)粉500克(ke)(ke)(ke)(ke),豬(zhu)肉250克(ke)(ke)(ke)(ke),青菜250克(ke)(ke)(ke)(ke)。
1、將豬肉(rou)剁(duo)成餡,加入(ru)(ru)醬油、精鹽拌勻,再放入(ru)(ru)花椒(jiao)面、豬油加入(ru)(ru)水(shui)向一個方向攪(jiao)動,至攪(jiao)勻為(wei)止,把青菜洗凈(jing)剁(duo)碎,擠凈(jing)水(shui)分(fen),放在(zai)肉(rou)餡內加入(ru)(ru)味精、蔥花、姜(jiang)末(mo)、芝麻油拌勻成餡。
2、把精粉放在(zai)案板(ban)上用開水燙熟拌成雪花狀,揉成面(mian)團(tuan),揉勻搓(cuo)成長條(tiao),下成50個劑(ji)子,撒點干面(mian)按扁,搟成圓形薄皮。
3、左手拿皮(pi)子(zi)(zi),右手抹餡,然后用手順餃子(zi)(zi)皮(pi)邊,從右到左捏合在一起(qi),做(zuo)成月牙形的餃子(zi)(zi)。
4、將餃子(zi)擺在展內蒸10分鐘(zhong)左右即熟。
