席營村的(de)手工掛面(mian)以家庭作坊為主。早在明朝時,席營村的(de)掛面(mian)就已聞名(ming)四方。因曾(ceng)被明代禮部(bu)尚書王越進貢給皇帝,列(lie)為宮廷佳(jia)品,而得(de)名(ming)“貢面(mian)”。
令(ling)人(ren)無(wu)法想象(xiang)的是,直徑僅有一兩毫米的掛(gua)面(mian),居然(ran)根(gen)根(gen)都是空(kong)心的。記者拿出(chu)一根(gen)掛(gua)面(mian),將(jiang)一端放到水(shui)(shui)(shui)里,然(ran)后用(yong)嘴吹(chui)另一端,居然(ran)能吹(chui)出(chu)氣泡。據(ju)了解,由(you)于席營村地處(chu)太行山余脈火龍崗,緊臨(lin)象(xiang)山,村里的飲(yin)用(yong)水(shui)(shui)(shui)、澆地用(yong)水(shui)(shui)(shui)全是優質(zhi)礦泉水(shui)(shui)(shui),所產(chan)小(xiao)麥淀(dian)粉含量極(ji)高。村民(min)們運用(yong)當地小(xiao)麥為原料,經過人(ren)工(gong)和面(mian)、揉面(mian)、壓平、開條、搓條、盤(pan)條、自然(ran)晾(liang)曬等(deng)28道工(gong)序精制而成。
每(mei)年冬(dong)季(ji),都是村(cun)里制作空(kong)心(xin)(xin)掛面(mian)的時節。每(mei)個家庭(ting)作坊(fang)的空(kong)心(xin)(xin)掛面(mian)都供不應求。快過年時,從(cong)四(si)面(mian)八方慕名而來購(gou)買空(kong)心(xin)(xin)掛面(mian)的人(ren)絡(luo)繹不絕。
席營村的(de)(de)空(kong)(kong)心掛(gua)面(mian)(mian)(mian)(mian)(mian)是純天然(ran)的(de)(de),如添(tian)加(jia)防腐劑、增白劑,空(kong)(kong)心掛(gua)面(mian)(mian)(mian)(mian)(mian)就(jiu)做不成。為(wei)了(le)第(di)二天上午(wu)(wu)能(neng)(neng)在晨陽(yang)(yang)里(li)晾曬掛(gua)面(mian)(mian)(mian)(mian)(mian),村里(li)人下(xia)午(wu)(wu)就(jiu)要開始和面(mian)(mian)(mian)(mian)(mian)。而后經揉面(mian)(mian)(mian)(mian)(mian)、壓(ya)條等一(yi)系列工序,到(dao)(dao)了(le)晚(wan)上還不能(neng)(neng)休息(xi),要將面(mian)(mian)(mian)(mian)(mian)盤成條,放到(dao)(dao)掛(gua)面(mian)(mian)(mian)(mian)(mian)洞里(li)醒(xing)面(mian)(mian)(mian)(mian)(mian)。等到(dao)(dao)凌(ling)晨4時,村民(min)們(men)把醒(xing)好的(de)(de)面(mian)(mian)(mian)(mian)(mian)條搭到(dao)(dao)屋外專門晾曬掛(gua)面(mian)(mian)(mian)(mian)(mian)的(de)(de)架子上,將原本筷子粗細(xi)、長不足1米的(de)(de)面(mian)(mian)(mian)(mian)(mian)條,拉(la)長到(dao)(dao)2.5米。面(mian)(mian)(mian)(mian)(mian)拉(la)好了(le),太陽(yang)(yang)也出來了(le)。
黎陽貢面耐火而不(bu)(bu)糟、回鍋(guo)而不(bu)(bu)爛,煮熟后挑入碗中,吃起(qi)來不(bu)(bu)僅口(kou)感(gan)爽滑,而且格外(wai)勁道。席營村的(de)手(shou)工(gong)空心掛面含有(you)人體(ti)(ti)所需的(de)重要營養物質,是(shi)一種低熱量(liang)高蛋白食(shi)品,有(you)降血壓、減肥養腎等(deng)功效(xiao),是(shi)老人、兒(er)童、產(chan)婦等(deng)體(ti)(ti)弱者的(de)常備滋補佳品,也是(shi)饋(kui)贈(zeng)親朋好友(you)的(de)上(shang)等(deng)禮(li)品。
