雪(xue)(xue)菜(cai)(cai)(cai)(cai),俗稱雪(xue)(xue)里蕻(hong),有(you)(you)的地方叫排(pai)菜(cai)(cai)(cai)(cai)、燒菜(cai)(cai)(cai)(cai),九頭(tou)芥也是(shi)雪(xue)(xue)菜(cai)(cai)(cai)(cai)的一種,因其(qi)腌(a)制(zhi)品色澤黃(huang)亮、清(qing)香(xiang)可(ke)口,在寧(ning)波(bo)一帶被譽(yu)稱為“咸雞(ji)”。浙江雪(xue)(xue)菜(cai)(cai)(cai)(cai)之鄉-鄞縣邱(qiu)隘(ai)鎮,種植腌(a)制(zhi)雪(xue)(xue)菜(cai)(cai)(cai)(cai)已有(you)(you)數百年(nian)歷史。寧(ning)波(bo)民間有(you)(you)句俗話,叫“三天不吃咸菜(cai)(cai)(cai)(cai)湯,腳骨有(you)(you)點酸(suan)汪汪”,可(ke)見咸菜(cai)(cai)(cai)(cai)的作(zuo)用(yong)。邱(qiu)隘(ai)色澤黃(huang)亮、清(qing)香(xiang)可(ke)口、清(qing)脆無(wu)硬梗,無(wu)論炒、煮、燉、蒸、拌、作(zuo)配(pei)料、湯料皆鮮美上口,故有(you)(you)“邱(qiu)隘(ai)咸雞(ji)”之美稱,尤(you)其(qi)是(shi)做魚類(lei)、油(you)膩(ni)類(lei)菜(cai)(cai)(cai)(cai)肴時,咸菜(cai)(cai)(cai)(cai)是(shi)不可(ke)缺(que)少的配(pei)料。
