1920年,張強德(de)父子在汕頭市升平路頭天后(hou)宮(gong)(gong)(即老媽(ma)宮(gong)(gong))附近擺(bai)攤經營粽(zong)球(qiu)(qiu),張強德(de)逝世(shi)后(hou),其子張良杰在老媽(ma)宮(gong)(gong)對面小(xiao)(xiao)巷內租用一間小(xiao)(xiao)鋪,開設(she)了順(shun)德(de)號粽(zong)球(qiu)(qiu)店。因粽(zong)球(qiu)(qiu)質量好,且(qie)占有地利,生(sheng)意日(ri)隆,順(shun)德(de)號的粽(zong)球(qiu)(qiu)也逐漸成為(wei)潮汕和海外潮人所喜愛的老媽(ma)宮(gong)(gong)粽(zong)球(qiu)(qiu)。
老媽(ma)宮粽(zong)球(qiu)店里,曾懸掛著(zhu)一塊寫著(zhu)“食定正知”的玻璃(li)匾,這(zhe)四(si)個字(zi)的潮(chao)汕話意思(si)是,只(zhi)有吃了(le)(le)并(bing)且仔(zi)細(xi)品味以(yi)后,才真(zhen)正知道它的好味道。由于老媽(ma)宮粽(zong)球(qiu)的出名,這(zhe)四(si)個字(zi)競也跟著(zhu)流傳開去(qu)。”老媽(ma)宮粽(zong)球(qiu)--食定正知”,成為潮(chao)汕地區人們的一句口頭俗語了(le)(le)。
主料(liao)采用(yong)的糯米,必須顆粒(li)飽滿且大小均勻。制作時(shi)先淘洗(xi)干(gan)凈(jing),用(yong)清水(shui)(shui)浸泡6小時(shi),撈(lao)起放(fang)在竹篩晾干(gan),次日下鍋(guo)用(yong)豬油(you)炒后,加(jia)適量(liang)上等(deng)魚露(lu),再炒至(zhi)米粒(li)晶瑩透(tou)亮(liang),油(you)香(xiang)潤滑,用(yong)盆盛裝待用(yong)。老(lao)媽宮粽球里有(you)甜(tian)、咸(xian)(xian)雙拼料(liao)餡(xian)(xian)(xian),甜(tian)料(liao)餡(xian)(xian)(xian)部分為綠豆沙餡(xian)(xian)(xian)(或烏豆沙餡(xian)(xian)(xian))和水(shui)(shui)晶餡(xian)(xian)(xian),外(wai)面(mian)用(yong)豬網膋包裹(guo);咸(xian)(xian)料(liao)餡(xian)(xian)(xian)部分為香(xiang)菇、蝦米、臘(la)腸、方魚末(mo)、蓮子(zi)、栗子(zi)和經腌制的南(nan)乳(ru)鬃頭肉。然后用(yong)竹葉、咸(xian)(xian)草包裹(guo)扎(zha)成六角球形,放(fang)進鍋(guo)內煮熟。食時(shi)解開竹葉盛盤,有(you)棱有(you)角,晶瑩潤滑、甘(gan)甜(tian)香(xiang)咸(xian)(xian)。
