龍(long)(long)江煎(jian)堆(dui)(dui)是(shi)一(yi)個以(yi)順德龍(long)(long)江命名的(de)(de)地方(fang)小吃,已(yi)有幾百年(nian)歷史(shi),最初(chu)(chu)是(shi)由(you)龍(long)(long)江鎮民(min)間興起,每到(dao)年(nian)底(di)家家戶(hu)戶(hu)都要做一(yi)些煎(jian)堆(dui)(dui)作為年(nian)宵糕點(dian),敬奉祖先及(ji)過年(nian)自(zi)奉送禮所用“煎(jian)堆(dui)(dui)碌(liu)(liu)碌(liu)(liu),金銀滿(man)屋”就(jiu)是(shi)寄托了民(min)眾(zhong)對(dui)生(sheng)活的(de)(de)愿望,龍(long)(long)江煎(jian)堆(dui)(dui)由(you)最初(chu)(chu)的(de)(de)民(min)間各(ge)(ge)家各(ge)(ge)戶(hu)自(zi)做發展(zhan)到(dao)由(you)工廠規模(mo)化(hua)生(sheng)產,把(ba)龍(long)(long)江煎(jian)堆(dui)(dui)的(de)(de)品牌推到(dao)世界各(ge)(ge)地。
龍(long)江煎(jian)(jian)堆(dui)與九江這二(er)個地域(yu)相連的地方,卻產出(chu)二(er)種(zhong)(zhong)不(bu)同的同名產品,并(bing)且(qie)叮當碼頭(tou)(tou),各有(you)“尋芳客”,內(nei)里相信還有(you)不(bu)少故事待人們發掘。二(er)種(zhong)(zhong)煎(jian)(jian)堆(dui)并(bing)稱二(er)大流派,際遇也幾乎(hu)一樣。“煎(jian)(jian)堆(dui)碌(liu)碌(liu),金銀滿屋”。廣東人喜歡做(zuo)煎(jian)(jian)堆(dui)食(shi)(shi)煎(jian)(jian)堆(dui),除了其(qi)香口好食(shi)(shi)之外,而且(qie)其(qi)外形圓碌(liu)碌(liu),有(you)團(tuan)圓、“碌(liu)得(de)起”的吉祥之意,也是(shi)春節送禮佳品。煎(jian)(jian)堆(dui)的品種(zhong)(zhong)很多,如石岐煎(jian)(jian)堆(dui)、九江煎(jian)(jian)堆(dui)、空心(xin)煎(jian)(jian)堆(dui)等,其(qi)中(zhong)以(yi)龍(long)江煎(jian)(jian)堆(dui)為上品,區別(bie)在(zai)于龍(long)江煎(jian)(jian)堆(dui)是(shi)實心(xin)的球狀(zhuang)。龍(long)江煎(jian)(jian)堆(dui)是(shi)一種(zhong)(zhong)年(nian)宵食(shi)(shi)品,始制于明代(dai)。據(ju)做(zuo)煎(jian)(jian)堆(dui)的師傅介紹,簡單地說,煎(jian)(jian)堆(dui)是(shi)以(yi)糯米(mi)粉糅合粘(zhan)米(mi)粉碾作皮(pi)(pi),以(yi)爆谷花與炸(zha)(zha)花生加糖漿拌均作餡,捏成(cheng)球狀(zhuang),大若拳頭(tou)(tou),表皮(pi)(pi)轆滿芝麻,下(xia)油鍋炸(zha)(zha)至金黃色即(ji)成(cheng),味道松(song)脆甘香。
糯米(mi)粉(fen)、粘米(mi)粉(fen)、爆谷花(hua)、花(hua)生、糖漿.芝麻(ma)。
煎(jian)(jian)堆,最重要兩個部分,一是(shi)煎(jian)(jian)堆皮(pi)(pi),二是(shi)煎(jian)(jian)堆餡料(liao)。煎(jian)(jian)堆皮(pi)(pi)精選優質糯(nuo)米(mi)(mi)粉用(yong)手搓(cuo)擦(ca),使其均勻,而后捏成(cheng)(cheng)(cheng)拳頭(tou)大(da)小的(de)(de)團子,再用(yong)棍搓(cuo)成(cheng)(cheng)(cheng)一塊片狀。煎(jian)(jian)堆餡料(liao)主要由白砂(sha)糖、爆(bao)米(mi)(mi)谷(gu)、花生(sheng)(sheng)仁等組成(cheng)(cheng)(cheng),先把(ba)白砂(sha)糖放入(ru)鍋中不停翻炒(chao)成(cheng)(cheng)(cheng)漿(jiang),直至起絲,下一步把(ba)爆(bao)米(mi)(mi)谷(gu)與花生(sheng)(sheng)仁按比例放入(ru)糖漿(jiang)中攪拌均勻,然后用(yong)手搓(cuo)成(cheng)(cheng)(cheng)一團團圓球形狀。把(ba)做好的(de)(de)煎(jian)(jian)堆皮(pi)(pi)包在(zai)餡料(liao)外,封(feng)好邊,放在(zai)芝(zhi)麻池(chi)中滾動(dong),讓表皮(pi)(pi)均勻粘滿芝(zhi)麻,然后放入(ru)油鍋。油炸(zha)時(shi),邊炸(zha)邊不停地翻動(dong),越(yue)翻動(dong)越(yue)容易脹大(da),俗稱“越(yue)碌(liu)越(yue)大(da)”,這也就(jiu)是(shi)民間所說的(de)(de)“煎(jian)(jian)堆碌(liu)碌(liu),金(jin)銀滿屋”的(de)(de)由來(lai)。炸(zha)好的(de)(de)煎(jian)(jian)堆表皮(pi)(pi)呈(cheng)金(jin)黃色,食味松脆(cui)甘香,也是(shi)春節(jie)送禮佳品。
做煎堆精(jing)選新鮮糯(nuo)米(mi)(mi),將其(qi)入水浸泡5小(xiao)(xiao)時左右。然后(hou)再(zai)用石(shi)碾(nian)碾(nian)為米(mi)(mi)粉(fen)(fen)狀(zhuang),用篩(shai)子篩(shai)取精(jing)細(xi)部分(fen),再(zai)用水搓成粉(fen)(fen)團(tuan),放進(jin)鍋中煮熟,然后(hou)滲和(he)余下的(de)糯(nuo)米(mi)(mi)粉(fen)(fen)用手搓擦,使其(qi)均勻(yun),而(er)后(hou)捏成拳頭(tou)大(da)小(xiao)(xiao)的(de)團(tuan)子,加進(jin)餡料。餡料有(you)糯(nuo)米(mi)(mi)粉(fen)(fen)、粘米(mi)(mi)粉(fen)(fen)、白砂糖、爆米(mi)(mi)谷(gu)、花生仁、芝麻仁、食用植物油等。油炸(zha)時,邊(bian)炸(zha)邊(bian)不停地翻動(dong),使其(qi)厚薄(bo)一(yi)致(zhi),幾分(fen)鐘(zhong)后(hou)撈起(qi),涼(liang)一(yi)會再(zai)炸(zha),如此三(san)四次,直到表皮呈金燦燦的(de)顏色(se),顯得貴氣十足。
