龍(long)江煎堆(dui)是一個以(yi)順(shun)德龍(long)江命(ming)名的(de)地方(fang)小吃(chi),已有(you)幾百年歷史(shi),最初(chu)是由(you)(you)龍(long)江鎮民間(jian)興起,每到年底家(jia)家(jia)戶戶都(dou)要做一些煎堆(dui)作為年宵糕點,敬(jing)奉(feng)祖(zu)先及過(guo)年自奉(feng)送禮所用“煎堆(dui)碌(liu)碌(liu),金銀滿屋”就是寄托了民眾對生活的(de)愿望(wang),龍(long)江煎堆(dui)由(you)(you)最初(chu)的(de)民間(jian)各家(jia)各戶自做發展到由(you)(you)工廠規模化生產,把(ba)龍(long)江煎堆(dui)的(de)品牌推到世界各地。
龍江煎(jian)(jian)(jian)堆(dui)(dui)(dui)與九(jiu)江這二個地域相(xiang)連的地方,卻產(chan)出二種(zhong)不(bu)(bu)同的同名(ming)產(chan)品(pin)(pin),并且叮當碼頭(tou),各有(you)“尋芳客”,內(nei)里相(xiang)信還(huan)有(you)不(bu)(bu)少故事(shi)待人們(men)發(fa)掘。二種(zhong)煎(jian)(jian)(jian)堆(dui)(dui)(dui)并稱二大流派,際遇也(ye)幾(ji)乎一(yi)樣。“煎(jian)(jian)(jian)堆(dui)(dui)(dui)碌(liu)碌(liu),金銀滿屋”。廣東人喜歡做(zuo)煎(jian)(jian)(jian)堆(dui)(dui)(dui)食煎(jian)(jian)(jian)堆(dui)(dui)(dui),除了其(qi)香(xiang)口好(hao)食之外(wai),而且其(qi)外(wai)形圓(yuan)碌(liu)碌(liu),有(you)團圓(yuan)、“碌(liu)得(de)起”的吉(ji)祥之意(yi),也(ye)是(shi)(shi)春節送禮佳(jia)品(pin)(pin)。煎(jian)(jian)(jian)堆(dui)(dui)(dui)的品(pin)(pin)種(zhong)很多,如石岐煎(jian)(jian)(jian)堆(dui)(dui)(dui)、九(jiu)江煎(jian)(jian)(jian)堆(dui)(dui)(dui)、空心煎(jian)(jian)(jian)堆(dui)(dui)(dui)等,其(qi)中以龍江煎(jian)(jian)(jian)堆(dui)(dui)(dui)為上品(pin)(pin),區別在(zai)于(yu)龍江煎(jian)(jian)(jian)堆(dui)(dui)(dui)是(shi)(shi)實心的球狀。龍江煎(jian)(jian)(jian)堆(dui)(dui)(dui)是(shi)(shi)一(yi)種(zhong)年(nian)宵食品(pin)(pin),始(shi)制于(yu)明代。據做(zuo)煎(jian)(jian)(jian)堆(dui)(dui)(dui)的師傅(fu)介紹,簡(jian)單地說,煎(jian)(jian)(jian)堆(dui)(dui)(dui)是(shi)(shi)以糯米(mi)粉(fen)糅合粘(zhan)米(mi)粉(fen)碾作皮,以爆谷花與炸(zha)花生加糖(tang)漿拌均作餡,捏成球狀,大若拳頭(tou),表皮轆(lu)滿芝麻,下油鍋(guo)炸(zha)至金黃色即(ji)成,味道松脆甘香(xiang)。
糯米粉、粘米粉、爆(bao)谷花、花生、糖漿.芝(zhi)麻(ma)。
煎(jian)(jian)堆,最重要(yao)兩個部分(fen),一(yi)是(shi)煎(jian)(jian)堆皮,二是(shi)煎(jian)(jian)堆餡(xian)料。煎(jian)(jian)堆皮精選優質糯米(mi)粉(fen)用(yong)手搓擦,使其均(jun)勻,而后(hou)捏(nie)成(cheng)拳頭大(da)(da)小的團(tuan)(tuan)子(zi),再用(yong)棍搓成(cheng)一(yi)塊片狀。煎(jian)(jian)堆餡(xian)料主要(yao)由(you)(you)白砂糖、爆米(mi)谷(gu)、花(hua)生仁等組成(cheng),先把白砂糖放(fang)(fang)入(ru)鍋(guo)中不(bu)停翻(fan)炒成(cheng)漿(jiang),直至起(qi)絲(si),下一(yi)步把爆米(mi)谷(gu)與(yu)花(hua)生仁按比例放(fang)(fang)入(ru)糖漿(jiang)中攪拌均(jun)勻,然后(hou)用(yong)手搓成(cheng)一(yi)團(tuan)(tuan)團(tuan)(tuan)圓球形狀。把做好(hao)的煎(jian)(jian)堆皮包在(zai)餡(xian)料外,封好(hao)邊(bian),放(fang)(fang)在(zai)芝(zhi)麻池中滾動,讓表皮均(jun)勻粘滿芝(zhi)麻,然后(hou)放(fang)(fang)入(ru)油鍋(guo)。油炸時,邊(bian)炸邊(bian)不(bu)停地翻(fan)動,越(yue)(yue)翻(fan)動越(yue)(yue)容易脹大(da)(da),俗稱“越(yue)(yue)碌越(yue)(yue)大(da)(da)”,這(zhe)也(ye)(ye)就是(shi)民間所(suo)說的“煎(jian)(jian)堆碌碌,金銀(yin)滿屋(wu)”的由(you)(you)來。炸好(hao)的煎(jian)(jian)堆表皮呈金黃色,食味松(song)脆甘香(xiang),也(ye)(ye)是(shi)春(chun)節送禮佳品。
做煎(jian)堆精選(xuan)新鮮糯(nuo)米(mi)(mi),將其(qi)入水浸泡(pao)5小時(shi)左右。然后(hou)(hou)再(zai)(zai)用(yong)石(shi)碾碾為米(mi)(mi)粉(fen)(fen)狀,用(yong)篩子(zi)篩取精細(xi)部(bu)分,再(zai)(zai)用(yong)水搓成粉(fen)(fen)團(tuan),放進鍋中煮熟(shu),然后(hou)(hou)滲和余下的(de)糯(nuo)米(mi)(mi)粉(fen)(fen)用(yong)手搓擦,使其(qi)均勻,而后(hou)(hou)捏成拳頭(tou)大小的(de)團(tuan)子(zi),加進餡料。餡料有糯(nuo)米(mi)(mi)粉(fen)(fen)、粘米(mi)(mi)粉(fen)(fen)、白砂糖、爆米(mi)(mi)谷、花生仁、芝(zhi)麻仁、食用(yong)植物油等。油炸時(shi),邊炸邊不(bu)停地(di)翻動,使其(qi)厚(hou)薄(bo)一致(zhi),幾分鐘(zhong)后(hou)(hou)撈(lao)起,涼(liang)一會(hui)再(zai)(zai)炸,如(ru)此三四次(ci),直(zhi)到表皮呈金(jin)燦燦的(de)顏色,顯得貴(gui)氣十(shi)足。
