盲(mang)(mang)(mang)(mang)(mang)(mang)人(ren)名(ming)叫(jiao)何聲朝,八歲時由于(yu)家貧患病,無錢(qian)醫理(li),而致雙目失明。十歲開始學(xue)卜(bu)(bu)易,學(xue)成后(hou)(hou),就在本市教善(shan)坊口開設"乾乾堂"卦命館,頗得(de)當時一(yi)些(xie)人(ren)士信仰(yang)。生(sheng)二子(zi),長(chang)子(zi)名(ming)叫(jiao)奮興(xing),字豫(yu)齋(zhai),次子(zi)名(ming)蔭(yin)源;豫(yu)齋(zhai)長(chang)大(da)后(hou)(hou)在館中侍奉父親。由于(yu)問(wen)卜(bu)(bu)者多(duo)攜帶小(xiao)孩,喧(xuan)鬧啼哭,影響工作。豫(yu)齋(zhai)乃想(xiang)出一(yi)法(fa):用(yong)飯焦干磨成米粉,加上(shang)芝麻(ma)、花生(sheng),用(yong)生(sheng)油和勻,制成米餅(bing)(bing)(bing)(bing)(bing)(bing),稱為(wei)"肉(rou)餅(bing)(bing)(bing)(bing)(bing)(bing)"。盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong)餅(bing)(bing)(bing)(bing)(bing)(bing)其實并(bing)非盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong)所創,而是(shi)其兒子(zi)創制的(de),由于(yu)購買(mai)者習慣了到盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong)處買(mai)餅(bing)(bing)(bing)(bing)(bing)(bing),并(bing)將餅(bing)(bing)(bing)(bing)(bing)(bing)稱為(wei)“盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong)餅(bing)(bing)(bing)(bing)(bing)(bing)”。 (現盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong)餅(bing)(bing)(bing)(bing)(bing)(bing)餅(bing)(bing)(bing)(bing)(bing)(bing)印仍舊有肉(rou)餅(bing)(bing)(bing)(bing)(bing)(bing)二字)這樣既可(ke)賣(mai)給問(wen)卜(bu)(bu)的(de)人(ren)用(yong)來喂小(xiao)孩,又可(ke)以(yi)多(duo)賺(zhuan)一(yi)些(xie)錢(qian)補助家計。由于(yu)制作別出心(xin)(xin)裁,甘香美味,價(jia)錢(qian)便(bian)宜,購買(mai)者日多(duo)。鄰(lin)居(ju)為(wei)了獲(huo)利,也(ye)仿制出售,但質量不(bu)及"正貨",人(ren)們都擁(yong)向何聲朝處買(mai),向盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong)買(mai)餅(bing)(bing)(bing)(bing)(bing)(bing)的(de)人(ren)們都叫(jiao)肉(rou)餅(bing)(bing)(bing)(bing)(bing)(bing)為(wei)"盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong)餅(bing)(bing)(bing)(bing)(bing)(bing)",輾轉(zhuan)相傳 ,盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong)餅(bing)(bing)(bing)(bing)(bing)(bing)遂由此而得(de)名(ming)。在封建(jian)社會里,盲(mang)(mang)(mang)(mang)(mang)(mang)人(ren)最忌別人(ren)叫(jiao)他(ta)(ta)盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong),因此百多(duo)年來,市場(chang)上(shang)盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong)餅(bing)(bing)(bing)(bing)(bing)(bing)雖已名(ming)聞遐(xia)邇(er),但他(ta)(ta)的(de)子(zi)孫后(hou)(hou)代,也(ye)不(bu)拿 “盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong)餅(bing)(bing)(bing)(bing)(bing)(bing)”作招牌,而以(yi)合記肉(rou)心(xin)(xin)餅(bing)(bing)(bing)(bing)(bing)(bing)為(wei)名(ming)。直到1952年解放后(hou)(hou)佛山(shan)市參加華南(nan)物資交流大(da)會,為(wei)了推銷佛山(shan)土特產品(pin),才正式定(ding)商(shang)標(biao)為(wei)盲(mang)(mang)(mang)(mang)(mang)(mang)公(gong)(gong)(gong)(gong)餅(bing)(bing)(bing)(bing)(bing)(bing)。
盲公餅的制(zhi)作,與(yu)一般餅食(shi)(shi)不同,有(you)其(qi)獨特之處,市場上出(chu)售(shou)的餅食(shi)(shi),大都(dou)以(yi)面(mian)粉配(pei)(pei)制(zhi),而盲公餅則全用(yong)糯米配(pei)(pei)以(yi)食(shi)(shi)糖(tang)、花(hua)生(sheng)、芝麻、豬肉、生(sheng)油等上乘原料巧(qiao)制(zhi)而成。餅內所夾的豬肉,其(qi)制(zhi)法(fa)更為(wei)美妙精(jing)巧(qiao),用(yong)幼細白糖(tang)腌藏(zang)數月(yue)(最少數天)才(cai)取(qu)出(chu)配(pei)(pei)制(zhi),吃起來(lai)甘美酥脆,美味可口,享譽中外。百多十年來(lai),制(zhi)法(fa)古樸,以(yi)瓦盆盛料焙制(zhi),坐著生(sheng)產,效率極低。直至(zhi)1955年公私(si)合營后,才(cai)改(gai)用(yong)案板制(zhi),站著生(sheng)產。由于操作方法(fa)改(gai)善,生(sheng)產效率大大提(ti)高。產品規格有(you)大小(xiao)二種,大的每(mei)筒(tong)六個(ge),小(xiao)的每(mei)筒(tong)十個(ge)。出(chu)口或送禮另有(you)裝紙盒和鐵罐(guan)。
生糯米(mi)粉1.5千克(ke)(ke),炒(chao)熟(shu)的糯米(mi)粉1千克(ke)(ke),綠豆粉2.5千克(ke)(ke),白糖粉5千克(ke)(ke),白芝麻500克(ke)(ke),花(hua)生仁500克(ke)(ke),熟(shu)豬(zhu)油1.5千克(ke)(ke),冰肉1千克(ke)(ke)。
1.冰肉(rou)制(zhi)法:將肥肉(rou)切成(cheng)條狀煮熟,放入(ru)冷水(shui)內浸(jin)泡5分(fen)鐘,取出晾干,用白砂糖腌制(zhi)1個星期。腌制(zhi)過程中(zhong)發現濕糖,要及(ji)時換糖。用時切成(cheng)小薄片(pian)。
2.炒熟的花生仁和芝麻,要磨成粉(fen)末。
3.將綠豆(dou)粉、大米粉、熟糯(nuo)米粉,放(fang)在案(an)板上(shang)拌勻,撥成(cheng)圓(yuan)圈,將熟豬(zhu)油、糖粉放(fang)入(ru),加清水攪拌溶化,再加入(ru)芝麻(ma)、花生粉末(mo),拌勻后把(ba)綠豆(dou)粉、米粉徐徐撥入(ru)揉成(cheng)粉團(tuan)。
4.取粉(fen)團搓成小圓(yuan)粒,用手掌輕(qing)輕(qing)壓(ya)扁,放入餅模內,加(jia)一塊(kuai)冰(bing)肉在(zai)中央,然后把模四周(zhou)的粉(fen)料(liao)合攏包著冰(bing)肉,再壓(ya)平,取出放置在(zai)竹(zhu)篩(shai)上。
5.50℃溫(wen)度烘(hong)40分鐘左右,加溫(wen)至120℃烘(hong)到餅(bing)的表面呈黃(huang)色(se),發(fa)出芬香氣味,便可取出。
