仙(xian)城束沙是廣東(dong)省汕(shan)頭(tou)市仙(xian)城地區傳統小吃,清同治(zhi)年間(jian)。仙(xian)城人趙(zhao)興合用(yong)炒熟的花生(sheng)米拌上煮煉成(cheng)甘的白糖,搖簸制(zhi)作(zuo)而成(cheng)顆(ke)粒狀糖果,稱(cheng)束砂(sha)。仙(xian)城束砂(sha)所用(yong)花生(sheng)米均經(jing)精選(xuan),去除(chu)小粒和霉變(bian)“臭仁”,使顆(ke)粒大小相近,品質優良;制(zhi)作(zuo)后糖衣均勻、潔白、酥脆,落地即啐離花生(sheng)仁,質地松脆,味道(dao)香甜,深受贊賞。
趙嘉合的孫子、年已古稀(xi)(xi)的仙城鄉民趙中水(shui)(shui),若(ruo)干年前發揮一(yi)技之長(chang),辦起(qi)(qi)家庭束(shu)砂(sha)(sha)作坊(fang),恢復這項名牌產品生(sheng)(sheng)產。據(ju)趙中水(shui)(shui)介紹,制作仙城束(shu)砂(sha)(sha)要(yao)選擇(ze)優質花生(sheng)(sheng)米,其顆(ke)粒(li)大小適中,炒熟;要(yao)選用上等白(bai)(bai)(bai)糖(tang)(tang)(tang),去其雜質,在鍋中煮(zhu)制。煮(zhu)糖(tang)(tang)(tang)時要(yao)特別小心觀察,掌(zhang)握火候,待(dai)糖(tang)(tang)(tang)漿(jiang)不稀(xi)(xi)不干,成(cheng)糊(hu)狀后,用一(yi)比一(yi)點(dian)四(si)的花生(sheng)(sheng)米和(he)糖(tang)(tang)(tang)漿(jiang)攪拌(ban),攪拌(ban)反復進(jin)行五(wu)次之后,一(yi)顆(ke)顆(ke)花生(sheng)(sheng)米都(dou)穿上了一(yi)套厚薄(bo)相當的白(bai)(bai)(bai)衣裳,冷(leng)卻后就(jiu)是束(shu)砂(sha)(sha)。由于仙城束(shu)砂(sha)(sha)糖(tang)(tang)(tang)衣厚薄(bo)均勻,潔白(bai)(bai)(bai)如(ru)銀,干而且(qie)脆,落(luo)地即(ji)碎(sui),吃(chi)起(qi)(qi)來既有花生(sheng)(sheng)米香味(wei),又有白(bai)(bai)(bai)糖(tang)(tang)(tang)清甜(tian),入(ru)口輕輕一(yi)嚼,即(ji)成(cheng)碎(sui)沫,十分(fen)清爽。
