蝦(xia)(xia)(xia)(xia)米(mi)(mi)主要產地在黃龍島(dao),已在五六十年(nian)的加(jia)工(gong)(gong)歷史。蝦(xia)(xia)(xia)(xia)米(mi)(mi)由大白蝦(xia)(xia)(xia)(xia)、紅絲(si)頭蝦(xia)(xia)(xia)(xia)等鮮蝦(xia)(xia)(xia)(xia)加(jia)工(gong)(gong)而(er)成。其(qi)中(zhong)金鉤(gou)蝦(xia)(xia)(xia)(xia)米(mi)(mi)堪稱蝦(xia)(xia)(xia)(xia)米(mi)(mi)中(zhong)的上品。這種蝦(xia)(xia)(xia)(xia)米(mi)(mi)個(ge)頭大,只(zhi)只(zhi)勻稱,烤(kao)熟時(shi)尾巴彎曲似(si)鉤(gou),故名“金鉤(gou)”,也稱“開洋”。蝦(xia)(xia)(xia)(xia)米(mi)(mi)加(jia)工(gong)(gong)質量的優劣與鮮蝦(xia)(xia)(xia)(xia)有關(guan),尤以冬(dong)蝦(xia)(xia)(xia)(xia)和春蝦(xia)(xia)(xia)(xia)為止選。傳統工(gong)(gong)藝,須經過近(jin)十道(dao)工(gong)(gong)序,近(jin)幾(ji)年(nian)簡化(hua)為烤(kao)熟、曬干、剝殼三道(dao)工(gong)(gong)序。由于蝦(xia)(xia)(xia)(xia)米(mi)(mi)色艷(yan)質凈,鮮美無(wu)比,是純天然(ran)的海鮮調(diao)味品,故深(shen)受人們的歡迎。
