蝦米(mi)(mi)(mi)(mi)(mi)主要產地在(zai)黃(huang)龍島(dao),已在(zai)五六十(shi)年(nian)的加(jia)(jia)工(gong)(gong)歷史。蝦米(mi)(mi)(mi)(mi)(mi)由大白蝦、紅絲(si)頭蝦等鮮蝦加(jia)(jia)工(gong)(gong)而成。其中(zhong)金(jin)鉤(gou)蝦米(mi)(mi)(mi)(mi)(mi)堪稱(cheng)蝦米(mi)(mi)(mi)(mi)(mi)中(zhong)的上(shang)品。這種(zhong)蝦米(mi)(mi)(mi)(mi)(mi)個頭大,只只勻(yun)稱(cheng),烤熟(shu)時尾巴彎曲似(si)鉤(gou),故名“金(jin)鉤(gou)”,也稱(cheng)“開洋”。蝦米(mi)(mi)(mi)(mi)(mi)加(jia)(jia)工(gong)(gong)質(zhi)量的優劣與鮮蝦有關,尤以冬(dong)蝦和春蝦為止選。傳統工(gong)(gong)藝,須(xu)經過近十(shi)道(dao)(dao)工(gong)(gong)序,近幾年(nian)簡化為烤熟(shu)、曬干、剝(bo)殼(ke)三(san)道(dao)(dao)工(gong)(gong)序。由于(yu)蝦米(mi)(mi)(mi)(mi)(mi)色(se)艷質(zhi)凈,鮮美無比,是純天然的海(hai)鮮調味(wei)品,故深(shen)受人們(men)的歡迎。
