色香(xiang)味俱全,是(shi)當(dang)地群眾逢年過(guo)節、婚(hun)喪娶嫁款待賓客或祭(ji)祀祖先和(he)神靈(ling)的傳(chuan)統食品。
鶴慶米糕,制作精細,分干糕和水糕兩(liang)大類。
先將(jiang)上等白米泡軟后,壓(ya)磨成粉,然后用(yong)薄荷、橙(cheng)皮汁(zhi)加紅糖將(jiang)粉碾(nian)細,用(yong)細篩篩入甑子(zi)內,再用(yong)薄刀(dao)小心劃成2寸(cun)、高1.5寸(cun),厚0.5寸(cun)的(de)小塊,用(yong)大火蒸熟(shu)。
高(gao)粉制成(cheng)后(hou)(hou),加(jia)百分(fen)之一(yi)的糯(nuo)米面(mian)(mian),蒸發亦如干糕(gao)(gao)(gao),但(dan)不(bu)加(jia)糖,待(dai)糕(gao)(gao)(gao)蒸熟(shu)后(hou)(hou)在(zai)把紅(hong)(hong)(hong)糖撒在(zai)上(shang)(shang)面(mian)(mian),待(dai)糖蒸化后(hou)(hou)在(zai)撒上(shang)(shang)芝麻或蘇子而(er)成(cheng)。干糕(gao)(gao)(gao),又(you)以(yi)喜慶(qing)干糕(gao)(gao)(gao)為上(shang)(shang)品(pin),喜慶(qing)干糕(gao)(gao)(gao)又(you)分(fen)夾(jia)層糕(gao)(gao)(gao)和色糕(gao)(gao)(gao)兩種(zhong)。夾(jia)層糕(gao)(gao)(gao)呈菱形,比普通干糕(gao)(gao)(gao)稍厚略大,中有紅(hong)(hong)(hong)糖、薄(bo)荷(he)、橙皮、棗泥、龍眼的混合夾(jia)層;色糕(gao)(gao)(gao)呈正方形,中間有紅(hong)(hong)(hong)色腰線,表面(mian)(mian)為紅(hong)(hong)(hong)色罩面(mian)(mian),紅(hong)(hong)(hong)白分(fen)明,質(zhi)細(xi)而(er)美觀。蒸米糕(gao)(gao)(gao)若用于(yu)待(dai)客時,表面(mian)(mian)加(jia)紅(hong)(hong)(hong)糖、玫瑰糖;用一(yi)祭祖供佛時,糕(gao)(gao)(gao)面(mian)(mian)須插鮮花。每年清明時節,青(qing)蠶豆成(cheng)熟(shu)上(shang)(shang)市,在(zai)米面(mian)(mian)中滲進豆米粉,糕(gao)(gao)(gao)成(cheng)綠黃色,食味(wei)更(geng)佳。這種(zhong)青(qing)豆米糕(gao)(gao)(gao),多用作上(shang)(shang)山(shan)掃墓和招待(dai)嘉賓貴客。
