隆(long)德長(chang)面(mian)(mian)是寧(ning)夏回(hui)族自(zi)治區固(gu)原市(shi)隆(long)德縣的(de)特色小吃(chi)。隆(long)德長(chang)面(mian)(mian)一般有細長(chang)面(mian)(mian)、細寬面(mian)(mian)、寬面(mian)(mian)等種(zhong)類,既屬經濟飽肚的(de)主食,還可作登大(da)雅之(zhi)堂的(de)上佳美食。
面(mian)條(tiao)(tiao)起源于中國(guo),已有(you)(you)四千(qian)多年(nian)的(de)制作食用歷(li)史。面(mian)條(tiao)(tiao)是一種制作簡單,食用方便,營養豐富,即可主食又可快餐的(de)健康保健食品。面(mian)條(tiao)(tiao)的(de)主要營養成(cheng)分有(you)(you)蛋白質、脂肪、碳水化合物等(deng)。面(mian)條(tiao)(tiao)易于消化吸(xi)收,有(you)(you)改善貧血、增強免(mian)疫(yi)力、平衡營養吸(xi)收等(deng)功效(xiao)。
上等(deng)長面(mian)(mian)(mian)面(mian)(mian)(mian)條勻(yun)稱,吃起來有韌勁,吸起來有響(xiang)聲,俗(su)稱吸長面(mian)(mian)(mian)。吃到(dao)最后(hou)一碗,一般(ban)要干拌(ban)寬面(mian)(mian)(mian)或韭葉(xie)面(mian)(mian)(mian),多加食(shi)油、臊(sao)子等(deng),俗(su)稱吃干飯(fan)。隆(long)德長面(mian)(mian)(mian)因湯(tang)(tang)(tang)和臊(sao)子的不同,叫法也不相同。如漿水摻(chan)湯(tang)(tang)(tang)叫“漿水面(mian)(mian)(mian)”,肉臊(sao)子做(zuo)面(mian)(mian)(mian)叫“臊(sao)子面(mian)(mian)(mian)”,不摻(chan)湯(tang)(tang)(tang)的叫“干拌(ban)面(mian)(mian)(mian)”,吃面(mian)(mian)(mian)不喝湯(tang)(tang)(tang)的叫“憨水面(mian)(mian)(mian)”。
隆德長(chang)面(mian)(mian)(mian)(mian)的制作工序是用(yong)上等小麥面(mian)(mian)(mian)(mian)粉和堿水(shui)調勻(yun),細(xi)揉(rou)慢(man)搟(xian),然后用(yong)刀切成或(huo)細(xi)或(huo)寬的長(chang)面(mian)(mian)(mian)(mian)條,俗(su)稱(cheng)細(xi)長(chang)面(mian)(mian)(mian)(mian)或(huo)寬長(chang)面(mian)(mian)(mian)(mian)。將切好(hao)的長(chang)面(mian)(mian)(mian)(mian)下到開水(shui)鍋內(nei),待水(shui)沸(fei)后即可(ke)將面(mian)(mian)(mian)(mian)用(yong)筷(kuai)子撈入碗(wan)中,放進提前炒好(hao)的臊子(常為炒肉菜(cai)、炒韭(jiu)菜(cai)、炒酸菜(cai)、炒雞蛋等居多),再盛進早已摻好(hao)的酸湯,分量(liang)多少按(an)飯碗(wan)大小而定,一般以(yi)湯多面(mian)(mian)(mian)(mian)少為宜(yi)。
