諸老大(da)粽(zong)子是產自浙江省湖(hu)州市的著名傳統小吃,是湖(hu)州“四大(da)名點”(諸老大(da)粽(zong)子、周(zhou)生記(ji)餛飩、丁蓮芳(fang)千(qian)張包子、震遠同玫瑰酥糖)之(zhi)一(yi),湖(hu)州“中華老字號”之(zhi)一(yi)。屬(shu)于端午節(jie)節(jie)日美食。
清香撲鼻、肉(rou)質鮮(xian)嫩,油光閃(shan)亮(liang)。有(you)開胃、味甘(gan)性溫(wen),有(you)補中益氣、養血安神的(de)功效(xiao)。諸(zhu)老大粽(zong)(zong)子最出名的(de)是細(xi)沙甜粽(zong)(zong)和鮮(xian)肉(rou)咸(xian)粽(zong)(zong)。甜粽(zong)(zong)中特(te)制的(de)玫瑰(gui)細(xi)沙,烏黑油亮(liang),味甜而(er)糯;咸(xian)粽(zong)(zong)精選(xuan)腿肉(rou)切成(cheng)條(tiao)狀分布(bu)全粽(zong)(zong),首尾均有(you)餡心,味鮮(xian)而(er)香。這(zhe)種粽(zong)(zong)子伏天存放(fang)一周不餿,冬季半月不變質。
諸(zhu)老大(da)(da)粽(zong)子(zi)最出名的是(shi)(shi)細(xi)(xi)沙(sha)甜(tian)(tian)粽(zong)和(he)鮮(xian)肉(rou)咸(xian)粽(zong)。甜(tian)(tian)粽(zong)中特制(zhi)的玫(mei)瑰細(xi)(xi)沙(sha),烏黑(hei)油亮,味甜(tian)(tian)而糯;咸(xian)粽(zong)精選腿(tui)肉(rou)切(qie)成條狀分布全粽(zong),首尾(wei)均有餡心,味鮮(xian)而香(xiang)(xiang)。這種粽(zong)子(zi)伏天存放一(yi)(yi)周不餿,冬季半月不變質。諸(zhu)老大(da)(da)粽(zong)子(zi)膾炙人口,主要賴其制(zhi)作精細(xi)(xi):一(yi)(yi)是(shi)(shi)選料特別認真。選用(yong)(yong)(yong)(yong)的糯米要"通變",經粒(li)粒(li)相似,顆顆飽滿壯實。做細(xi)(xi)沙(sha)用(yong)(yong)(yong)(yong)的赤(chi)豆,必用(yong)(yong)(yong)(yong)"大(da)(da)紅袍",豬油用(yong)(yong)(yong)(yong)上好(hao)的肥豬板油。裹咸(xian)粽(zong)選用(yong)(yong)(yong)(yong)腿(tui)肉(rou),精肥分檔切(qie)割。箬(ruo)葉選用(yong)(yong)(yong)(yong)清香(xiang)(xiang)撲(pu)鼻的徽州伏箬(ruo)。二(er)是(shi)(shi)操作技術(shu)過(guo)硬(ying)。裹粽(zong)用(yong)(yong)(yong)(yong)力不松不緊(jin),粽(zong)子(zi)四角密縫,外(wai)形(xing)挺括修(xiu)長,打(da)結美觀,煮粽(zong)時(shi)火(huo)(huo)(huo)候恰到好(hao)處,猛火(huo)(huo)(huo)、平火(huo)(huo)(huo)揀洗淘(tao)凈,外(wai)形(xing)燜(men)火(huo)(huo)(huo)間隔使用(yong)(yong)(yong)(yong)。三(san)(san)是(shi)(shi)色、香(xiang)(xiang)、味俱(ju)全。色:甜(tian)(tian)粽(zong)米白(bai)糯軟,里嵌烏黑(hei)發亮油晶晶的細(xi)(xi)沙(sha);咸(xian)粽(zong)呈醬黃(huang)色,肉(rou)質鮮(xian)嫩,油光(guang)閃(shan)亮。香(xiang)(xiang):除原(yuan)料本身(shen)混(hun)合香(xiang)(xiang)外(wai),還夾有一(yi)(yi)種玫(mei)瑰香(xiang)(xiang),主要是(shi)(shi)細(xi)(xi)沙(sha)中摻入自制(zhi)的玫(mei)瑰露(lu)。味:餡心和(he)糯米都有科學配方,吃起來美味可口。四是(shi)(shi)講究清潔衛生,采用(yong)(yong)(yong)(yong)多(duo)道消毒(du)措施。如處理(li)粽(zong)子(zi)做到三(san)(san)要三(san)(san)不,用(yong)(yong)(yong)(yong)具經常日(ri)光(guang)殺菌等。五(wu)是(shi)(shi)適(shi)合時(shi)令,品種多(duo)樣化。
