諸(zhu)老(lao)大粽(zong)子(zi)是產(chan)自浙江省湖(hu)州市(shi)的著名傳統小吃,是湖(hu)州“四大名點”(諸(zhu)老(lao)大粽(zong)子(zi)、周生記餛飩、丁(ding)蓮芳(fang)千(qian)張(zhang)包(bao)子(zi)、震遠同玫瑰(gui)酥(su)糖(tang))之一,湖(hu)州“中華(hua)老(lao)字號(hao)”之一。屬于端午節(jie)節(jie)日美食。
清香(xiang)撲鼻(bi)、肉(rou)質(zhi)鮮(xian)嫩(nen),油(you)光閃亮(liang)(liang)。有開胃、味(wei)(wei)甘性(xing)溫,有補中益氣、養血安神的功效。諸(zhu)老大粽(zong)(zong)子最出(chu)名的是細(xi)沙(sha)甜(tian)粽(zong)(zong)和鮮(xian)肉(rou)咸(xian)粽(zong)(zong)。甜(tian)粽(zong)(zong)中特制的玫瑰細(xi)沙(sha),烏黑(hei)油(you)亮(liang)(liang),味(wei)(wei)甜(tian)而(er)(er)糯;咸(xian)粽(zong)(zong)精選腿(tui)肉(rou)切(qie)成條狀分布全粽(zong)(zong),首尾均有餡心(xin),味(wei)(wei)鮮(xian)而(er)(er)香(xiang)。這種(zhong)粽(zong)(zong)子伏天存放一周不餿,冬(dong)季半月不變(bian)質(zhi)。
諸老大(da)粽(zong)(zong)子(zi)(zi)最出名的(de)是(shi)細(xi)(xi)沙(sha)甜(tian)粽(zong)(zong)和(he)鮮(xian)肉(rou)咸粽(zong)(zong)。甜(tian)粽(zong)(zong)中特(te)制(zhi)(zhi)的(de)玫(mei)瑰(gui)細(xi)(xi)沙(sha),烏黑油(you)亮(liang),味(wei)甜(tian)而糯;咸粽(zong)(zong)精選腿肉(rou)切(qie)成條(tiao)狀分布全粽(zong)(zong),首尾均(jun)有餡心(xin),味(wei)鮮(xian)而香(xiang)(xiang)(xiang)。這種(zhong)粽(zong)(zong)子(zi)(zi)伏天存放(fang)一(yi)周不餿,冬季半月不變質。諸老大(da)粽(zong)(zong)子(zi)(zi)膾炙人口,主要賴其(qi)制(zhi)(zhi)作(zuo)精細(xi)(xi):一(yi)是(shi)選料特(te)別認真。選用(yong)(yong)的(de)糯米(mi)(mi)要"通(tong)變",經(jing)粒粒相似,顆顆飽滿壯實。做細(xi)(xi)沙(sha)用(yong)(yong)的(de)赤(chi)豆,必用(yong)(yong)"大(da)紅(hong)袍",豬油(you)用(yong)(yong)上好(hao)的(de)肥豬板油(you)。裹咸粽(zong)(zong)選用(yong)(yong)腿肉(rou),精肥分檔切(qie)割(ge)。箬葉選用(yong)(yong)清香(xiang)(xiang)(xiang)撲鼻的(de)徽州伏箬。二是(shi)操作(zuo)技術過硬。裹粽(zong)(zong)用(yong)(yong)力不松不緊,粽(zong)(zong)子(zi)(zi)四角密縫,外形挺括修長,打結(jie)美觀,煮粽(zong)(zong)時火候恰(qia)到好(hao)處(chu),猛火、平火揀洗淘(tao)凈,外形燜火間隔使用(yong)(yong)。三是(shi)色、香(xiang)(xiang)(xiang)、味(wei)俱全。色:甜(tian)粽(zong)(zong)米(mi)(mi)白(bai)糯軟,里嵌烏黑發亮(liang)油(you)晶(jing)晶(jing)的(de)細(xi)(xi)沙(sha);咸粽(zong)(zong)呈醬(jiang)黃色,肉(rou)質鮮(xian)嫩,油(you)光閃亮(liang)。香(xiang)(xiang)(xiang):除(chu)原料本身混(hun)合香(xiang)(xiang)(xiang)外,還夾有一(yi)種(zhong)玫(mei)瑰(gui)香(xiang)(xiang)(xiang),主要是(shi)細(xi)(xi)沙(sha)中摻入自制(zhi)(zhi)的(de)玫(mei)瑰(gui)露(lu)。味(wei):餡心(xin)和(he)糯米(mi)(mi)都(dou)有科學配方,吃起來美味(wei)可口。四是(shi)講究清潔衛生,采用(yong)(yong)多(duo)道(dao)消(xiao)毒措(cuo)施(shi)。如處(chu)理粽(zong)(zong)子(zi)(zi)做到三要三不,用(yong)(yong)具經(jing)常日(ri)光殺菌等。五是(shi)適合時令,品(pin)種(zhong)多(duo)樣化。
