桐城豐(feng)糕(gao),潔(jie)白(bai)如霜,松泡綿軟,味鮮香甜(tian),為安徽(hui)桐城春節(jie)期間特有的一種傳統糕(gao)類食(shi)品。此時,家(jia)家(jia)戶戶都要制(zhi)作(zuo)或購(gou)買(mai)豐(feng)糕(gao),以(yi)祈求來年吉祥大發,家(jia)興業(ye)旺。
豐糕(gao)(gao)的(de)傳統制作,是取上(shang)(shang)(shang)(shang)等(deng)秈(xian)米(mi),凈(jing)洗后用水浸泡,米(mi)入(ru)(ru)骨后磨(mo)出淀(dian)粉,加(jia)白糖和渾酒(jiu)(jiu)(土法制糯米(mi)酒(jiu)(jiu)的(de)副產品,又稱“紅酒(jiu)(jiu)”)或“老面”,攪勻(yun)后發(fa)酵,等(deng)來了浮子(zi)(糕(gao)(gao)粉發(fa)酵后浮在表層的(de)泡花(hua)),即可(ke)(ke)上(shang)(shang)(shang)(shang)蒸(zheng)籠(long)(long)(long)(long)蒸(zheng)。蒸(zheng)籠(long)(long)(long)(long)要(yao)一籠(long)(long)(long)(long)籠(long)(long)(long)(long)地(di)上(shang)(shang)(shang)(shang)。取糕(gao)(gao)粉適量,下(xia)堿(jian)水中和,上(shang)(shang)(shang)(shang)籠(long)(long)(long)(long)前再下(xia)適量小(xiao)蘇打水“提泡”。如(ru)(ru)蒸(zheng)“葷糕(gao)(gao)”,同(tong)(tong)時放入(ru)(ru)一些切成一厘(li)米(mi)見方的(de)板(ban)豬油(you)塊(kuai)。上(shang)(shang)(shang)(shang)籠(long)(long)(long)(long)時要(yao)用猛火。約蒸(zheng)四(si)十多分鐘,上(shang)(shang)(shang)(shang)第二(er)籠(long)(long)(long)(long),同(tong)(tong)時將前一籠(long)(long)(long)(long)調(diao)至高格。如(ru)(ru)此一籠(long)(long)(long)(long)籠(long)(long)(long)(long)地(di)上(shang)(shang)(shang)(shang),直至手夠不(bu)上(shang)(shang)(shang)(shang)時止。取糕(gao)(gao)時,可(ke)(ke)用一只(zhi)筷子(zi)從糕(gao)(gao)的(de)正中插(cha)入(ru)(ru),如(ru)(ru)拔起(qi)時不(bu)粘糕(gao)(gao),說明糕(gao)(gao)已熟透(tou)即可(ke)(ke)取籠(long)(long)(long)(long)。取出的(de)糕(gao)(gao),放置(zhi)通風(feng)處涼十多分鐘,即可(ke)(ke)用食用色素(su)在糕(gao)(gao)面上(shang)(shang)(shang)(shang)書寫(xie)“恭喜發(fa)財”、“健康(kang)長壽”、“國(guo)泰平安”之類的(de)吉祥語,以表達人(ren)們(men)美好的(de)愿(yuan)望(wang)。
