桐城(cheng)豐糕(gao)(gao),潔白如霜,松泡(pao)綿軟(ruan),味鮮香甜,為安徽桐城(cheng)春節期間特(te)有(you)的一種傳統糕(gao)(gao)類食(shi)品。此(ci)時,家家戶(hu)戶(hu)都(dou)要制作或購買(mai)豐糕(gao)(gao),以祈(qi)求來年吉祥(xiang)大(da)發(fa),家興業旺。
豐糕(gao)的(de)傳(chuan)統制作,是取上(shang)等秈米(mi),凈洗后用(yong)(yong)水(shui)浸泡(pao),米(mi)入骨后磨出淀粉,加白(bai)糖和渾酒(土法制糯米(mi)酒的(de)副產品,又稱“紅酒”)或“老面”,攪勻后發(fa)(fa)酵,等來了浮(fu)(fu)子(zi)(zi)(糕(gao)粉發(fa)(fa)酵后浮(fu)(fu)在(zai)表(biao)層的(de)泡(pao)花),即可(ke)上(shang)蒸籠(long)(long)蒸。蒸籠(long)(long)要一(yi)籠(long)(long)籠(long)(long)地(di)上(shang)。取糕(gao)粉適(shi)量(liang)(liang),下堿(jian)水(shui)中(zhong)和,上(shang)籠(long)(long)前再下適(shi)量(liang)(liang)小蘇打水(shui)“提泡(pao)”。如蒸“葷糕(gao)”,同時(shi)(shi)放入一(yi)些切成一(yi)厘米(mi)見方的(de)板豬油塊(kuai)。上(shang)籠(long)(long)時(shi)(shi)要用(yong)(yong)猛(meng)火。約(yue)蒸四十多分(fen)鐘(zhong),上(shang)第二籠(long)(long),同時(shi)(shi)將前一(yi)籠(long)(long)調至(zhi)高(gao)格。如此一(yi)籠(long)(long)籠(long)(long)地(di)上(shang),直至(zhi)手夠不(bu)上(shang)時(shi)(shi)止。取糕(gao)時(shi)(shi),可(ke)用(yong)(yong)一(yi)只筷(kuai)子(zi)(zi)從糕(gao)的(de)正中(zhong)插入,如拔起時(shi)(shi)不(bu)粘糕(gao),說明糕(gao)已熟透(tou)即可(ke)取籠(long)(long)。取出的(de)糕(gao),放置通風處涼十多分(fen)鐘(zhong),即可(ke)用(yong)(yong)食(shi)用(yong)(yong)色素在(zai)糕(gao)面上(shang)書寫“恭(gong)喜發(fa)(fa)財”、“健康長(chang)壽(shou)”、“國泰平安”之類的(de)吉祥語(yu),以表(biao)達人們美好的(de)愿望。
