金魚餃(jiao)是湖北省傳統的(de)地(di)方小吃,屬于鄂(e)菜系。形似金魚,晶瑩剔透,餡成鮮香(xiang)。把餃(jiao)子的(de)邊(bian)分成三份,兩份稍(shao)短一(yi)份稍(shao)長,捏緊(jin)后(hou)短的(de)兩邊(bian)向身(shen)部(bu)彎(wan)轉,裝潢上赤色的(de)食物成眼睛,尾部(bu)也(ye)捏成波浪形。
形(xing)似金(jin)魚,晶瑩剔透,餡成鮮香。
蒸,澄(cheng)(cheng)粉(fen)(fen)與生粉(fen)(fen)和勻,用開水燙熟,加化豬油揉勻成(cheng)(cheng)(cheng)(cheng)澄(cheng)(cheng)粉(fen)(fen)面(mian)(mian)(mian)(mian)團,分少部分下米加入(ru)莧菜汁(zhi)、熟蛋黃、可(ke)可(ke)粉(fen)(fen),揉成(cheng)(cheng)(cheng)(cheng)紅、黃、咖啡(fei)三(san)色面(mian)(mian)(mian)(mian)團待(dai)用。兩種肉(rou)末(mo)加上香(xiang)菇、鹽、味精(jing)用豬油炒(chao)成(cheng)(cheng)(cheng)(cheng)餡(xian)心備用。將白色的(de)澄(cheng)(cheng)粉(fen)(fen)面(mian)(mian)(mian)(mian)團搓條、下劑、搓圓后(hou)(hou)壓(ya)扁,包入(ru)餡(xian)心,封好口,捏成(cheng)(cheng)(cheng)(cheng)金魚(yu)形(xing)坯子(zi),魚(yu)尾用木梳平壓(ya)出(chu)花紋。用花鉗夾出(chu)魚(yu)背鰭,咖啡(fei)色澄(cheng)(cheng)面(mian)(mian)(mian)(mian)和黃色澄(cheng)(cheng)面(mian)(mian)(mian)(mian)做成(cheng)(cheng)(cheng)(cheng)魚(yu)后(hou)(hou)和魚(yu)眼(yan)圈,紅色的(de)澄(cheng)(cheng)面(mian)(mian)(mian)(mian)搓圓鑲嵌(qian)成(cheng)(cheng)(cheng)(cheng)“魚(yu)眼(yan)珠(zhu)”,最后(hou)(hou)放入(ru)盤中入(ru)籠蒸5、6分鐘(zhong)至熟,取(qu)出(chu)即成(cheng)(cheng)(cheng)(cheng)。
