水(shui)鄉(xiang)魚皮(pi)(pi)(pi)角(jiao),又叫古勞魚皮(pi)(pi)(pi)角(jiao),古勞魚皮(pi)(pi)(pi)角(jiao)是廣(guang)東省(sheng)江(jiang)門市(shi)(shi)鶴山地(di)方傳統技藝(yi),江(jiang)門市(shi)(shi)市(shi)(shi)級非物質文(wen)之一。2021年2月9日經江(jiang)門市(shi)(shi)人(ren)民政府(fu)批準(zhun)古勞魚皮(pi)(pi)(pi)角(jiao)入選江(jiang)門市(shi)(shi)第八批市(shi)(shi)級非物質文(wen)化遺(yi)產(chan)代表性(xing)項(xiang)目名(ming)錄。水(shui)鄉(xiang)魚皮(pi)(pi)(pi)角(jiao)原產(chan)及盛產(chan)地(di)為古勞上(shang)升(sheng)之升(sheng)平(ping)墟。遠近馳(chi)名(ming),吃者云集(ji)。其特色皮(pi)(pi)(pi)薄餡靚,小(xiao)巧玲瓏。味(wei)道鮮(xian)美,價(jia)格便宜(yi),經濟(ji)實(shi)惠。
古勞(lao)魚(yu)皮(pi)角(jiao)(jiao)制作選(xuan)料(liao)上(shang)乘,造工(gong)精細(xi):魚(yu)肉(rou)選(xuan)自(zi)當地產的(de)(de)鮮(xian)活鯇(huan)魚(yu),拌(ban)以(yi)肥瘦參半(ban)的(de)(de)豬肉(rou),另(ling)加冬菇、馬蹄、陳皮(pi)、胡(hu)椒、蔥花(hua)等十(shi)多(duo)種配(pei)料(liao)搗制;外(wai)皮(pi)粉(fen)料(liao)用一級(ji)生粉(fen)與澄(cheng)面,絕不(bu)含(han)糊。片皮(pi)、搗餡、包餡,全用傳(chuan)統手工(gong)藝,角(jiao)(jiao)皮(pi)特別注重刀工(gong),要薄而(er)不(bu)破,滑而(er)不(bu)爛。包好后,置(zhi)小(xiao)蒸籠中,上(shang)鍋(guo)用猛火蒸熟(shu)。食(shi)時,置(zhi)豉碟備用;端放桌(zhuo)上(shang),香氣撲(pu)鼻,芳(fang)香醉人,未(wei)動筷(kuai)而(er)早(zao)傾倒矣。
相傳明初洪武年(nian)間(jian),地屬肇(zhao)慶府(fu)古勞都的(de)圍墩水(shui)(shui)鄉,正值(zhi)是(shi)古勞圍興建之年(nian)代,朝廷派官員巡(xun)視督修。當時,肇(zhao)慶州(zhou)府(fu)的(de)州(zhou)官巡(xun)督“廣(guang)橋(qiao)(qiao)”市集(即現(xian)雙橋(qiao)(qiao)參(can)篤(du)堤段(duan)靠龍古公路有一(yi)小集市稱(cheng)為“廣(guang)橋(qiao)(qiao)市集”,后遷移至現(xian)雙橋(qiao)(qiao)圩(wei)市集),那時的(de)廣(guang)橋(qiao)(qiao)市集,前是(shi)黃(huang)沙灘,后是(shi)橫海浪,只(zhi)有一(yi)間(jian)打鐵鋪,一(yi)間(jian)紡線店(dian),一(yi)間(jian)小食茶(cha)水(shui)(shui)店(dian)(稱(cheng)之為“驛站”)。
時值晌午(wu),州官(guan)此時甚覺口干舌燥,更兼饑腸響如(ru)鼓(gu),吃欲頓起,于(yu)是便入(ru)店(dian)(dian)(dian)(dian)(dian)(dian)詢(xun)問店(dian)(dian)(dian)(dian)(dian)(dian)主可有(you)進(jin)食(shi)(shi)之(zhi)(zhi)(zhi)(zhi)物,以解燃眉(mei)之(zhi)(zhi)(zhi)(zhi)急.店(dian)(dian)(dian)(dian)(dian)(dian)主一(yi)(yi)(yi)看,是個當官(guan)的,況且(qie)來頭不(bu)小(xiao),隨從一(yi)(yi)(yi)群,店(dian)(dian)(dian)(dian)(dian)(dian)主不(bu)敢怠慢(man),馬上讓座(zuo),沏茶遞水(shui)(shui)(shui),忙得不(bu)可開交,心里(li)盤算著(zhu)(zhu)不(bu)知(zhi)拿(na)什(shen)么來招(zhao)(zhao)呼(hu)這位大(da)員,臉上顯露(lu)出“巧婦難(nan)為無米之(zhi)(zhi)(zhi)(zhi)炊”的神(shen)情。正當為難(nan)之(zhi)(zhi)(zhi)(zhi)時,店(dian)(dian)(dian)(dian)(dian)(dian)主見(jian)大(da)水(shui)(shui)(shui)缸里(li)恰好養有(you)兩條四斤來重(zhong)的鯇(huan)魚(yu),于(yu)是靈(ling)機一(yi)(yi)(yi)動,一(yi)(yi)(yi)種“美食(shi)(shi)”在(zai)店(dian)(dian)(dian)(dian)(dian)(dian)主腦(nao)海形(xing)成,他(ta)一(yi)(yi)(yi)邊(bian)囑咐(fu)小(xiao)二(er)(er)招(zhao)(zhao)呼(hu)客人,一(yi)(yi)(yi)邊(bian)到廚房動手劏魚(yu),只(zhi)(zhi)見(jian)店(dian)(dian)(dian)(dian)(dian)(dian)主手腳麻利,先把魚(yu)放血干凈,三(san)下(xia)五落(luo)二(er)(er)剝(bo)下(xia)魚(yu)皮(pi)(pi),切好魚(yu)肉,剁成肉團,后(hou)(hou)把魚(yu)皮(pi)(pi)切成長寬二(er)(er)寸小(xiao)塊(kuai),兩條魚(yu)共切三(san)十(shi)八塊(kuai),把已調好味料(liao)的魚(yu)肉團按分量放在(zai)小(xiao)魚(yu)皮(pi)(pi)之(zhi)(zhi)(zhi)(zhi)中(zhong),再用五寸長的短線縫(feng)合魚(yu)皮(pi)(pi),線尾塞入(ru)角(jiao)(jiao)(jiao)(jiao)肉之(zhi)(zhi)(zhi)(zhi)中(zhong),留寸把長線頭以便進(jin)食(shi)(shi)。一(yi)(yi)(yi)切工序完畢,店(dian)(dian)(dian)(dian)(dian)(dian)主將三(san)十(shi)八只(zhi)(zhi)魚(yu)角(jiao)(jiao)(jiao)(jiao)分兩碟(die)加火蒸熟(shu),熟(shu)后(hou)(hou)的魚(yu)皮(pi)(pi)角(jiao)(jiao)(jiao)(jiao)其形(xing)象(xiang)似水(shui)(shui)(shui)鄉(xiang)河涌里(li)長著(zhu)(zhu)的水(shui)(shui)(shui)菱角(jiao)(jiao)(jiao)(jiao),色澤晶(jing)白,凸顯魚(yu)紋(wen),活靈(ling)活現(xian),出第一(yi)(yi)(yi)碟(die)熱騰騰的魚(yu)皮(pi)(pi)水(shui)(shui)(shui)菱角(jiao)(jiao)(jiao)(jiao)共十(shi)九只(zhi)(zhi)呈現(xian)于(yu)州官(guan)前面,官(guan)員一(yi)(yi)(yi)看、一(yi)(yi)(yi)聞(wen),呆住了,他(ta)迫不(bu)及待地(di)伸(shen)手往碟(die)里(li)拿(na)角(jiao)(jiao)(jiao)(jiao),店(dian)(dian)(dian)(dian)(dian)(dian)主笑而阻(zu)之(zhi)(zhi)(zhi)(zhi)曰:“大(da)人且(qie)慢(man)”,接著(zhu)(zhu)教其吃角(jiao)(jiao)(jiao)(jiao)之(zhi)(zhi)(zhi)(zhi)順序:先用手拈(nian)住角(jiao)(jiao)(jiao)(jiao)的線頭,然(ran)后(hou)(hou)往裝有(you)佐料(liao)味的小(xiao)碟(die)點一(yi)(yi)(yi)下(xia),再進(jin)食(shi)(shi),一(yi)(yi)(yi)角(jiao)(jiao)(jiao)(jiao)完之(zhi)(zhi)(zhi)(zhi)可剩一(yi)(yi)(yi)線。
州官恍然,隨即拈住角(jiao)(jiao)的(de)線(xian)頭,一(yi)(yi)口(kou)一(yi)(yi)只后把線(xian)高舉說:“世間一(yi)(yi)絕,象(xiang)形(xing),美(mei)味,口(kou)齒(chi)留香(xiang),線(xian)不(bu)長但長久(jiu)。”接著風卷殘云將一(yi)(yi)碟魚(yu)皮水(shui)菱角(jiao)(jiao)一(yi)(yi)掃而光,余味未盡再上一(yi)(yi)碟,州官連下兩城,共吃了三十八(ba)只角(jiao)(jiao)。而裝有佐(zuo)料的(de)小碟卻原封不(bu)動,那些隨從跟班在旁站立(li),只有垂涎抹(mo)嘴角(jiao)(jiao)的(de)權利。
當(dang)店主詢(xun)問(wen)州(zhou)官吃后味覺如(ru)(ru)何,州(zhou)官笑而問(wen)店主貴姓(xing)(xing),答鄙(bi)人(ren)(ren)姓(xing)(xing)關(guan),州(zhou)官笑道,好姓(xing)(xing),隨即叫人(ren)(ren)備文房四寶,寫下(xia)一(yi)幅對聯(lian)贈給店主,上聯(lian)為(wei)“佳(jia)肴清甜(tian)爽脆韌”,下(xia)聯(lian)為(wei)“廣(guang)橋(qiao)一(yi)線魚(yu)(yu)皮(pi)角(jiao)(jiao)(jiao)”。橫額(e)“關(guan)注(zhu)”(主)。從此(ci),廣(guang)橋(qiao)“魚(yu)(yu)皮(pi)角(jiao)(jiao)(jiao)”名聲風靡(mi),遠播海(hai)內外,來品嘗圍(wei)墩(dun)“魚(yu)(yu)皮(pi)角(jiao)(jiao)(jiao)”的人(ren)(ren)絡(luo)繹不(bu)絕,人(ren)(ren)們(men)常(chang)說:“沒吃上魚(yu)(yu)皮(pi)角(jiao)(jiao)(jiao)者不(bu)算到過圍(wei)墩(dun)水(shui)鄉”。可想而知,“魚(yu)(yu)皮(pi)角(jiao)(jiao)(jiao)”此(ci)水(shui)鄉美(mei)食品牌(pai),已深深地烙印在(zai)(zai)人(ren)(ren)們(men)腦海(hai)之中(zhong)。水(shui)鄉人(ren)(ren)善變,求變,在(zai)(zai)“魚(yu)(yu)皮(pi)角(jiao)(jiao)(jiao)”的啟迪之下(xia),不(bu)斷創出本地美(mei)食,如(ru)(ru)“魚(yu)(yu)皮(pi)干蒸”、“魚(yu)(yu)皮(pi)餛(hun)吞(tun)”、“魚(yu)(yu)皮(pi)蝦餃”、“釀鯪魚(yu)(yu)”等。
時過境遷,廣(guang)橋市集已不(bu)復存(cun)(cun)在,但(dan)廣(guang)橋魚(yu)皮角(jiao)卻又在雙橋圩(市)發揚光大,魚(yu)皮角(jiao)的(de)外衣(yi)亦以(yi)米(mi)粉衣(yi)代替,但(dan)其中(zhong)之韻味(wei)猶存(cun)(cun),美味(wei)有過之而(er)無不(bu)及。
