蜀人(ren)好食天下聞明,川(chuan)人(ren)之(zhi)(zhi)菜(cai)(cai)(cai)獨具風(feng)味,川(chuan)菜(cai)(cai)(cai)百(bai)(bai)菜(cai)(cai)(cai)百(bai)(bai)味,聲色香形驚(jing)艷出俗而余味無窮,何故?皆因川(chuan)菜(cai)(cai)(cai)之(zhi)(zhi)求實而擇料無論,重(zhong)味而佐料考(kao)究,故川(chuan)菜(cai)(cai)(cai)海納百(bai)(bai)川(chuan),兼容天下之(zhi)(zhi)食而獨具麻辣(la)之(zhi)(zhi)味,川(chuan)味源渚于佐,佐則其惟一(yi)物,是惟川(chuan)菜(cai)(cai)(cai)之(zhi)(zhi)靈魂——“紹豐(feng)和”郫縣豆瓣(ban)也(ye)。
相(xiang)傳(chuan)明末清初,陳(chen)氏祖輩陳(chen)益兼在入(ru)蜀途(tu)中。其賴以(yi)(yi)充(chong)饑之蠶豆遇(yu)連日陰雨而(er)生霉。祖輩不忍(ren)棄(qi),遂置(zhi)于田埂晾曬就以(yi)(yi)鮮辣椒(jiao)拌(ban)和而(er)食(shi),竟鮮美無比(bi),余味悠長,其后竟以(yi)(yi)此(ci)為生。
清(qing)嘉慶(qing)八年,福建汀(ting)州祖輩(bei)陳(chen)逸(yi)先來到郫(pi)(pi)縣(xian)(xian)(xian),于(yu)郫(pi)(pi)縣(xian)(xian)(xian)南街開設作(zuo)坊取本地原料與清(qing)水(shui),以此法大量(liang)生產豆瓣(ban)兼而(er)經營醬(jiang)醋,漸成氣候,郫(pi)(pi)縣(xian)(xian)(xian)豆瓣(ban)亦始得(de)名。清(qing)咸(xian)豐三年,六(liu)公(gong)公(gong)陳(chen)守(shou)信于(yu)郫(pi)(pi)縣(xian)(xian)(xian)城南街開設醬(jiang)園(yuan),以釀造醬(jiang)醋和郫(pi)(pi)縣(xian)(xian)(xian)豆瓣(ban)為(wei)業(ye)。其店號(hao)曰(yue)“紹(shao)豐和”醬(jiang)園(yuan)。
民國初年,郫縣(xian)(xian)(xian)豆(dou)(dou)瓣的(de)生(sheng)產已(yi)成相(xiang)當(dang)規(gui)模,并籍以郫縣(xian)(xian)(xian)所產之(zhi)(zhi)大煙遠銷(xiao)(xiao)各地,東(dong)經成渝沿(yan)江而下至湘鄂,南轉(zhuan)宜(yi)賓(bin)行銷(xiao)(xiao)云(yun)貴(gui),西(xi)由(you)雅(ya)安銷(xiao)(xiao)至康藏,北取道廣元銷(xiao)(xiao)往陜甘。外地來的(de)郫縣(xian)(xian)(xian)煙販均征(zheng)購豆(dou)(dou)瓣以返鄉饋贈友(you)鄰(lin)親(qin)朋,從此,郫縣(xian)(xian)(xian)豆(dou)(dou)瓣名聲(sheng)遠洋。民國四(si)年,四(si)川軍(jun)政府犒賞(shang)西(xi)藏。于郫縣(xian)(xian)(xian)“紹豐和”醬園訂購郫縣(xian)(xian)(xian)豆(dou)(dou)瓣三(san)、四(si)萬斤(jin)。貨(huo)至駐軍(jun),軍(jun)士去荷葉(xie)、油紙,視之(zhi)(zhi)鮮亮如昨,嘗之(zhi)(zhi)味美無(wu)比,深(shen)得官兵贊譽。軍(jun)政府特(te)此傳(chuan)令嘉獎(jiang)冰贈獎(jiang)牌以茲鼓勵(li),郫縣(xian)(xian)(xian)豆(dou)(dou)瓣由(you)此名聲(sheng)大噪(zao)。通過幾代人的(de)努(nu)力,積累了一定財富。
一(yi)九五八(ba)年,紹豐和響應政(zheng)府號(hao)召,實行(xing)公(gong)私(si)合(he)營組建(jian)成為國(guo)營郫(pi)縣(xian)(xian)豆(dou)瓣廠,革(ge)新定名地(di)(di)方國(guo)營,產量扶搖直上。從此(ci)隨(sui)川菜的(de)流傳,郫(pi)縣(xian)(xian)豆(dou)瓣也(ye)遠(yuan)銷至世界各地(di)(di),深得(de)各國(guo)人民的(de)喜愛。
時到(dao)今日(ri),“紹(shao)(shao)豐和”郫縣(xian)豆(dou)瓣已愈三(san)百年的歷史,世事(shi)滄桑,時移俗易。多少傳統之(zhi)文化(hua)風俗和土特名產已隨(sui)風而逝,而唯(wei)郫縣(xian)“紹(shao)(shao)豐和”豆(dou)瓣延續至今,此乃川(chuan)人之(zhi)大幸(xing)也。
現由陳氏后裔——傳(chuan)人陳述承繼(ji)祖(zu)業(ye)發揚(yang)光(guang)大。工廠下設作(zuo)坊(fang)兩處(chu),主產(chan)紅豆(dou)瓣(ban)、鹽漬菜、調(diao)味品等系列產(chan)品。所(suo)生(sheng)產(chan)的豆(dou)瓣(ban)按秘方工藝(yi)生(sheng)產(chan)、配料考究、工藝(yi)獨特、質量過(guo)硬,通過(guo)360多(duo)天人工翻曬釀造而成(cheng),豆(dou)酥瓣(ban)脆,粘稠絨(rong)實,其(qi)色紅褐(he)明潤、油亮、鮮實為川菜烹飪必備之調(diao)料,亦(yi)可直接(jie)佐餐分為提味增(zeng)色,故深(shen)得川人親睞。
