天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou),創(chuang)辦于(yu)1927年(nian)(nian)(nian)秋(qiu),初(chu)名(ming)(ming)武津天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou),由蘇州陸(lu)(lu)冷(leng)(leng)年(nian)(nian)(nian)出資創(chuang)建(jian)。陸(lu)(lu)冷(leng)(leng)年(nian)(nian)(nian)的(de)(de)(de)(de)祖父川(chuan)江清末任蘇州知府(fu),民國(guo)初(chu)遷居(ju)杭(hang)(hang)(hang)(hang)(hang)州。他以(yi)唐代(dai)詩(shi)人(ren)(ren)(ren)宋之問“桂子月中(zhong)落,天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)云(yun)外(wai)飄”的(de)(de)(de)(de)名(ming)(ming)句為(wei)(wei)該(gai)店(dian)命名(ming)(ming)。據傳,當年(nian)(nian)(nian)陸(lu)(lu)冷(leng)(leng)年(nian)(nian)(nian)曾以(yi)重金酬謝為(wei)(wei)“天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)”取(qu)名(ming)(ming)提出想法的(de)(de)(de)(de)書生。后(hou)來,天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)聲明遠(yuan)揚(yang),又有(you)(you)人(ren)(ren)(ren)譽之為(wei)(wei)“國(guo)色(se)天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)”、“天(tian)(tian)(tian)(tian)(tian)下第一(yi)(yi)(yi)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)”。天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)開業之初(chu),生意不(bu)是(shi)特別(bie)好(hao),陸(lu)(lu)冷(leng)(leng)年(nian)(nian)(nian)受到來西(xi)(xi)湖(hu)游玩的(de)(de)(de)(de)客(ke)(ke)人(ren)(ren)(ren)喜歡尋購杭(hang)(hang)(hang)(hang)(hang)州土(tu)特產,如絲綢織錦(jin)、龍井茶、天(tian)(tian)(tian)(tian)(tian)竺筷的(de)(de)(de)(de)啟示(shi),就決(jue)定以(yi)經營(ying)杭(hang)(hang)(hang)(hang)(hang)州風味(wei)為(wei)(wei)特色(se)。因(yin)此改名(ming)(ming)為(wei)(wei)武津天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou),以(yi)標榜其(qi)特色(se)。陸(lu)(lu)冷(leng)(leng)年(nian)(nian)(nian)聘請杭(hang)(hang)(hang)(hang)(hang)州名(ming)(ming)廚(chu)能(neng)師(shi),廣搜杭(hang)(hang)(hang)(hang)(hang)州傳統風味(wei)于(yu)一(yi)(yi)(yi)家。1929年(nian)(nian)(nian),杭(hang)(hang)(hang)(hang)(hang)州舉辦西(xi)(xi)湖(hu)博(bo)覽會,國(guo)內(nei)外(wai)賓客(ke)(ke)紛紛進入天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou),天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)的(de)(de)(de)(de)杭(hang)(hang)(hang)(hang)(hang)幫菜(cai)(cai)頗(po)受贊譽。此后(hou),天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)在(zai)上海(hai)(hai)、香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)港開設(she)“天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)杭(hang)(hang)(hang)(hang)(hang)菜(cai)(cai)館”,至今(jin),香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)港地區、美國(guo)和(he)東南(nan)亞一(yi)(yi)(yi)些國(guo)家仍有(you)(you)餐館使用“天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)”的(de)(de)(de)(de)招牌(pai),經營(ying)杭(hang)(hang)(hang)(hang)(hang)州特色(se)菜(cai)(cai)。天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)地杭(hang)(hang)(hang)(hang)(hang)城久居(ju)正(zheng)宗(zong)杭(hang)(hang)(hang)(hang)(hang)菜(cai)(cai)首席,在(zai)海(hai)(hai)外(wai)亦可謂(wei)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)飄萬里。 發展1931年(nian)(nian)(nian),陸(lu)(lu)冷(leng)(leng)年(nian)(nian)(nian)聘請杭(hang)(hang)(hang)(hang)(hang)州飲(yin)食(shi)業行家孟(meng)永泰(tai)經營(ying),數年(nian)(nian)(nian)后(hou),孟(meng)永泰(tai)積聚(ju)財力,從陸(lu)(lu)冷(leng)(leng)年(nian)(nian)(nian)手中(zhong)盤過“天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)”獨(du)家經營(ying)。孟(meng)永泰(tai)是(shi)紹(shao)興人(ren)(ren)(ren),他善于(yu)揣摩顧客(ke)(ke)的(de)(de)(de)(de)心(xin)理,經營(ying)方式靈(ling)活。當時來杭(hang)(hang)(hang)(hang)(hang)的(de)(de)(de)(de)游客(ke)(ke)大(da)多(duo)是(shi)上海(hai)(hai)人(ren)(ren)(ren),他便用魚(yu)、蝦、蟹、禽(qin)等鮮(xian)貨為(wei)(wei)原料,制作(zuo)上講究清鮮(xian)脆嫩,很(hen)適合上海(hai)(hai)游客(ke)(ke)的(de)(de)(de)(de)口味(wei)。他還(huan)兼營(ying)川(chuan)、徽、蘇菜(cai)(cai)、以(yi)廣招來客(ke)(ke),并聘用技術好(hao)的(de)(de)(de)(de)廚(chu)師(shi)按特長分工(gong)掌廚(chu)。同時不(bu)惜工(gong)本整修門(men)面(mian),建(jian)起了玻璃養魚(yu)池,活殺現烹(peng)吸引顧客(ke)(ke)。孟(meng)永泰(tai)還(huan)建(jian)立蔬(shu)菜(cai)(cai)、家禽(qin)基地,使時令(ling)(ling)佳(jia)肴(yao)不(bu)斷應市(shi),因(yin)而成為(wei)(wei)杭(hang)(hang)(hang)(hang)(hang)城的(de)(de)(de)(de)名(ming)(ming)樓(lou)(lou)(lou)。當時天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)是(shi)杭(hang)(hang)(hang)(hang)(hang)州第一(yi)(yi)(yi)家購置電器(qi)冰箱的(de)(de)(de)(de)菜(cai)(cai)館。夏令(ling)(ling)時節,天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)自制“冰豆腐”供應食(shi)客(ke)(ke),震動杭(hang)(hang)(hang)(hang)(hang)城。店(dian)主有(you)(you)堅持薄利多(duo)銷的(de)(de)(de)(de)原則(ze),時常坐在(zai)大(da)堂觀(guan)察顧客(ke)(ke),聽取(qu)顧客(ke)(ke)對(dui)菜(cai)(cai)肴(yao)質量的(de)(de)(de)(de)直接(jie)反映(ying)。一(yi)(yi)(yi)時間,“要劃船,西(xi)(xi)湖(hu)六碼頭;要吃菜(cai)(cai),杭(hang)(hang)(hang)(hang)(hang)州天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)”的(de)(de)(de)(de)俚語不(bu)脛而走,名(ming)(ming)揚(yang)滬(hu)杭(hang)(hang)(hang)(hang)(hang)寧,生意越做(zuo)越大(da)。該(gai)店(dian)原設(she)在(zai)教仁街(今(jin)郵電路)南(nan)側,1956年(nian)(nian)(nian)遷至鬧市(shi)區的(de)(de)(de)(de)解放路井亭橋邊,1981年(nian)(nian)(nian)7月改建(jian)成三層樓(lou)(lou)(lou),面(mian)積達(da)2000余平方米,一(yi)(yi)(yi)次可接(jie)待賓客(ke)(ke)1000余人(ren)(ren)(ren)。天(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)(lou)經營(ying)的(de)(de)(de)(de)杭(hang)(hang)(hang)(hang)(hang)共,口味(wei)純正(zheng),特色(se)鮮(xian)明。東坡肉(rou)、西(xi)(xi)湖(hu)醋魚(yu)、龍井蝦仁、叫化童雞(ji)、干炸(zha)響鈴、油燜春筍、鮮(xian)栗炒子雞(ji)、春筍炒步魚(yu)、火踵神仙鴨(ya)等均為(wei)(wei)該(gai)店(dian)的(de)(de)(de)(de)拿手菜(cai)(cai)。
