國家農業部(bu)對中(zhong)國四(si)(si)大板(ban)(ban)(ban)鴨(ya)做出了(le)官方認定(ding):全國有(you)四(si)(si)大品牌板(ban)(ban)(ban)鴨(ya)分別(bie)是(shi)江蘇南京板(ban)(ban)(ban)鴨(ya)、江西南安板(ban)(ban)(ban)鴨(ya)、福建(jian)建(jian)甌板(ban)(ban)(ban)鴨(ya)、四(si)(si)川建(jian)昌板(ban)(ban)(ban)鴨(ya)。
1、江蘇南京板鴨
南(nan)京(jing)板(ban)(ban)鴨(ya)(ya)馳(chi)名(ming)中(zhong)外。在我國(guo)一直(zhi)都(dou)有北烤鴨(ya)(ya),南(nan)板(ban)(ban)鴨(ya)(ya)的美(mei)譽,板(ban)(ban)鴨(ya)(ya)色香(xiang)味俱全,外形飽滿,體(ti)肥(fei)皮白(bai),肉質細嫩(nen)緊密,是有名(ming)的江蘇(su)三(san)寶(bao)之一,很受當地人的喜愛。板(ban)(ban)鴨(ya)(ya)是用鹽鹵腌制風干而(er)成,分(fen)臘板(ban)(ban)鴨(ya)(ya)和春(chun)板(ban)(ban)鴨(ya)(ya)兩種。南(nan)京(jing)板(ban)(ban)鴨(ya)(ya)外形飽滿,體(ti)肥(fei)皮白(bai),肉質細嫩(nen)緊密,食之酥、香(xiang)回味無窮。
2、江西南安板鴨
南安(an)板(ban)鴨(ya)是江南省(sheng)著名的特(te)產。外(wai)形美觀,色澤白(bai)凈,皮(pi)薄肉(rou)嫩,尾油(you)豐滿,骨脆可(ke)嚼,味香(xiang)可(ke)口,誘(you)人(ren)食(shi)欲。成為國內外(wai)市場上(shang)的臘味珍品。制作方法是用(yong)大余(yu)特(te)產“大余(yu)麻鴨(ya)”生鴨(ya)腌制而成。南安(an)板(ban)鴨(ya)皮(pi)色奶(nai)白(bai),瘦肉(rou)醬色,咸淡適中。將鴨(ya)腌制曬干(gan)后,需食(shi)時,放在鍋內蒸熟即可(ke)。具有瘦肉(rou)甘香(xiang)、肥(fei)肉(rou)不(bu)膩的特(te)點。
3、福建建甌板鴨
建(jian)甌(ou)板鴨(ya)在武(wu)夷山及閩北一帶屬(shu)頗有名(ming)氣的(de)(de)風味食品(pin)。它形如龜體、色澤(ze)白嫩光潤、肉質肥(fei)厚、味道香美。建(jian)甌(ou)板鴨(ya)選料(liao)考究,加工精細。每年農歷九月開始制作,翌年二(er)月二(er)收盤。其中(zhong)尤以霜風天(tian)制作的(de)(de)板鴨(ya)最(zui)佳(jia)。建(jian)甌(ou)板鴨(ya)烹飪簡便,經清(qing)洗(xi)切塊或油(you)炸(zha),或加入老酒(jiu)清(qing)蒸、紅燒,風味獨特,香嫩可口,是宴客的(de)(de)佳(jia)肴,也是中(zhong)外(wai)游客喜愛購買的(de)(de)物品(pin)之(zhi)一。
4、四川建昌板鴨
建(jian)昌(chang)(chang)板鴨主(zhu)產在西(xi)昌(chang)(chang)、德(de)昌(chang)(chang)等縣、市(shi),具有(you)體大(da)、膘肥(fei)、油多、肉嫩、氣香(xiang)、味美等特點。據歷(li)史記載,元(yuan)、明兩代(dai),西(xi)昌(chang)(chang)原(yuan)名(ming)建(jian)昌(chang)(chang),以(yi)出產板鴨著稱(cheng),故名(ming)建(jian)昌(chang)(chang)板鴨。
