國家農業部對中(zhong)國四大板(ban)鴨做出了官方(fang)認定:全國有四大品牌板(ban)鴨分(fen)別是江蘇南京板(ban)鴨、江西(xi)南安(an)板(ban)鴨、福建(jian)建(jian)甌板(ban)鴨、四川(chuan)建(jian)昌板(ban)鴨。
1、江蘇南京板鴨
南(nan)京板(ban)鴨(ya)馳名中外。在我國一(yi)直(zhi)都有北(bei)烤鴨(ya),南(nan)板(ban)鴨(ya)的(de)美(mei)譽,板(ban)鴨(ya)色香味俱全(quan),外形飽(bao)滿,體(ti)肥皮(pi)白,肉質(zhi)細嫩緊密,是有名的(de)江蘇三寶之(zhi)一(yi),很(hen)受當地人(ren)的(de)喜愛(ai)。板(ban)鴨(ya)是用鹽(yan)鹵腌制風干而成,分(fen)臘板(ban)鴨(ya)和(he)春板(ban)鴨(ya)兩種(zhong)。南(nan)京板(ban)鴨(ya)外形飽(bao)滿,體(ti)肥皮(pi)白,肉質(zhi)細嫩緊密,食之(zhi)酥、香回(hui)味無窮。
2、江西南安板鴨
南安板(ban)鴨(ya)是江南省(sheng)著(zhu)名的特產(chan)。外形(xing)美(mei)觀,色澤白凈,皮(pi)薄肉嫩(nen),尾油豐滿,骨脆(cui)可嚼,味(wei)香可口,誘人食欲。成為國內外市場上的臘味(wei)珍品。制(zhi)作方法是用大余(yu)特產(chan)“大余(yu)麻鴨(ya)”生鴨(ya)腌(a)制(zhi)而成。南安板(ban)鴨(ya)皮(pi)色奶白,瘦(shou)肉醬(jiang)色,咸淡適(shi)中。將鴨(ya)腌(a)制(zhi)曬干(gan)后,需食時,放在鍋內蒸熟即(ji)可。具有瘦(shou)肉甘(gan)香、肥肉不膩的特點。
3、福建建甌板鴨
建甌板(ban)鴨在武夷(yi)山及閩北一帶(dai)屬(shu)頗有名氣(qi)的風味(wei)食品。它形如龜(gui)體、色澤(ze)白嫩光潤、肉質肥厚、味(wei)道香美(mei)。建甌板(ban)鴨選料考究,加工精(jing)細。每(mei)年農歷九月(yue)開始制(zhi)作,翌年二月(yue)二收(shou)盤(pan)。其(qi)中(zhong)尤以霜風天(tian)制(zhi)作的板(ban)鴨最佳(jia)。建甌板(ban)鴨烹飪簡(jian)便,經清洗切塊(kuai)或油炸,或加入老酒清蒸(zheng)、紅燒,風味(wei)獨特(te),香嫩可(ke)口,是(shi)宴(yan)客的佳(jia)肴,也是(shi)中(zhong)外游客喜愛購買(mai)的物品之一。
4、四川建昌板鴨
建(jian)昌(chang)板鴨主產在西昌(chang)、德昌(chang)等(deng)縣、市,具有體(ti)大、膘肥、油(you)多(duo)、肉嫩、氣(qi)香(xiang)、味美等(deng)特點(dian)。據(ju)歷史記(ji)載,元、明(ming)兩代,西昌(chang)原名建(jian)昌(chang),以出產板鴨著(zhu)稱(cheng),故名建(jian)昌(chang)板鴨。
