西(xi)(xi)湖龍(long)(long)井(jing),屬(shu)綠茶。產(chan)于浙江省杭州市西(xi)(xi)湖龍(long)(long)井(jing)村周圍(wei)群山,并(bing)因此得名。具有1200多年歷史,清(qing)乾隆游覽(lan)杭州西(xi)(xi)湖時(shi),盛贊西(xi)(xi)湖龍(long)(long)井(jing)茶,把獅峰山下(xia)胡(hu)公廟前(qian)的十(shi)八棵茶樹封為(wei)“御茶”。西(xi)(xi)湖龍(long)(long)井(jing)按(an)外形和內質(zhi)的優次(ci)分作(zuo)1~8級。
特級西(xi)(xi)(xi)(xi)湖龍(long)(long)井(jing)(jing)(jing)茶(cha)扁平光滑挺直,色澤嫩(nen)綠光潤(run),香氣鮮嫩(nen)清(qing)高,滋味鮮爽甘醇(chun),葉(xie)底細嫩(nen)呈(cheng)朵(duo)。清(qing)明(ming)節前采(cai)制(zhi)的龍(long)(long)井(jing)(jing)(jing)茶(cha)簡(jian)稱(cheng)明(ming)前龍(long)(long)井(jing)(jing)(jing),美稱(cheng)女兒(er)紅,“院外風荷西(xi)(xi)(xi)(xi)子笑,明(ming)前龍(long)(long)井(jing)(jing)(jing)女兒(er)紅。”西(xi)(xi)(xi)(xi)湖龍(long)(long)井(jing)(jing)(jing)茶(cha)與西(xi)(xi)(xi)(xi)湖一樣,是人、自然、文化三(san)者的完(wan)美結晶(jing),是西(xi)(xi)(xi)(xi)湖地域文化的重要載體。
西湖龍(long)(long)(long)(long)井(jing)中有幾個有名(ming)的品類“獅(shi)峰(feng)龍(long)(long)(long)(long)井(jing)”、“梅塢(wu)龍(long)(long)(long)(long)井(jing)”、“云棲龍(long)(long)(long)(long)井(jing)”、“虎跑(pao)龍(long)(long)(long)(long)井(jing)”等。“獅(shi)峰(feng)龍(long)(long)(long)(long)井(jing)”產于(yu)龍(long)(long)(long)(long)井(jing)村(cun)、獅(shi)子峰(feng)、翁家山一(yi)帶,色澤略黃,素稱“糙(cao)米色”。“梅塢(wu)龍(long)(long)(long)(long)井(jing)”產于(yu)云棲、梅家塢(wu)一(yi)帶,外(wai)形(xing)挺(ting)秀、扁平(ping)光滑,色澤翠綠。
西湖(hu)龍(long)井(jing)茶,外形扁平挺秀,色(se)(se)澤綠(lv)翠,內(nei)質(zhi)清香(xiang)味(wei)醇,泡在杯中(zhong),芽葉色(se)(se)綠(lv)。素以“色(se)(se)綠(lv)、香(xiang)郁、味(wei)甘、形美”四絕稱著(zhu)。
春茶(cha)(cha)(cha)(cha)中(zhong)的特級(ji)(ji)西湖龍井、浙江龍井外形(xing)扁平光滑,苗(miao)鋒尖削(xue),芽(ya)長(chang)于葉(xie),色(se)澤嫩(nen)綠(lv)(lv),體表(biao)無茸毛(mao);湯色(se)嫩(nen)綠(lv)(lv)(黃(huang))明(ming)亮;清香(xiang)(xiang)或(huo)嫩(nen)栗香(xiang)(xiang),但有部分茶(cha)(cha)(cha)(cha)帶高火(huo)香(xiang)(xiang);滋味(wei)清爽或(huo)濃醇(chun);葉(xie)底嫩(nen)綠(lv)(lv),尚完(wan)整。其余各級(ji)(ji)龍井茶(cha)(cha)(cha)(cha)隨著級(ji)(ji)別(bie)的下降,外形(xing)色(se)澤由(you)(you)(you)嫩(nen)綠(lv)(lv)→青(qing)綠(lv)(lv)→墨綠(lv)(lv),茶(cha)(cha)(cha)(cha)身由(you)(you)(you)小到大,茶(cha)(cha)(cha)(cha)條由(you)(you)(you)光滑至粗糙(cao);香(xiang)(xiang)味(wei)由(you)(you)(you)嫩(nen)爽轉向濃粗,四級(ji)(ji)茶(cha)(cha)(cha)(cha)開始有粗味(wei);葉(xie)底由(you)(you)(you)嫩(nen)芽(ya)轉向對夾葉(xie),色(se)澤由(you)(you)(you)嫩(nen)黃(huang)→青(qing)綠(lv)(lv)→黃(huang)褐。夏秋龍井茶(cha)(cha)(cha)(cha),色(se)澤暗綠(lv)(lv)或(huo)深綠(lv)(lv),茶(cha)(cha)(cha)(cha)身較大,體表(biao)無茸毛(mao),湯色(se)黃(huang)亮,有清香(xiang)(xiang)但較粗糙(cao),滋味(wei)濃略澀,葉(xie)底黃(huang)亮,總體品質(zhi)比同級(ji)(ji)春茶(cha)(cha)(cha)(cha)差。
