陜(shan)(shan)西(xi)菜(cai)(cai)又被稱(cheng)為(wei)(wei)秦菜(cai)(cai),以其中(zhong)的關中(zhong)菜(cai)(cai)、陜(shan)(shan)南菜(cai)(cai)、陜(shan)(shan)北菜(cai)(cai)為(wei)(wei)代(dai)表。雖然陜(shan)(shan)西(xi)菜(cai)(cai)并(bing)不在八大菜(cai)(cai)系(xi)之(zhi)列,但(dan)在中(zhong)國(guo)飲(yin)食文化的發展中(zhong)有著重(zhong)(zhong)要地位,也(ye)是中(zhong)國(guo)最古老的菜(cai)(cai)系(xi)之(zhi)一,對(dui)其他菜(cai)(cai)系(xi)或多(duo)或少(shao)產生著一定的影響。陜(shan)(shan)西(xi)菜(cai)(cai)的調味(wei)樸實無華,更注重(zhong)(zhong)內在的味(wei)和香(xiang),色與形則(ze)在其次。
