主(zhu)席(xi)(xi)宴是火(huo)宮(gong)殿(dian)(dian)總經理譚飛先生帶(dai)領全體火(huo)宮(gong)殿(dian)(dian)人(ren),通過(guo)研究(jiu)史(shi)料,走訪曾經為主(zhu)席(xi)(xi)服務的湘(xiang)(xiang)菜(cai)(cai)大廚們,并(bing)反復(fu)研究(jiu),多(duo)次(ci)摸索最終成型(xing)。主(zhu)席(xi)(xi)宴是以偉大領袖毛(mao)主(zhu)席(xi)(xi)視察(cha)火(huo)宮(gong)殿(dian)(dian)時所品嘗的火(huo)宮(gong)殿(dian)(dian)美食為基準,結(jie)合毛(mao)澤(ze)東青(qing)年時代(dai)在火(huo)宮(gong)殿(dian)(dian)吃過(guo)的小吃,以及(ji)主(zhu)席(xi)(xi)喜愛(ai)的湘(xiang)(xiang)菜(cai)(cai),組成一席(xi)(xi)。有(you)六(liu)冷碟、十大菜(cai)(cai)、兩隨菜(cai)(cai)、四點心(xin),有(you)的清鮮淡雅,有(you)的色香味濃,都(dou)是原汁(zhi)原味的湘(xiang)(xiang)菜(cai)(cai)、湘(xiang)(xiang)點,經火(huo)宮(gong)殿(dian)(dian)的湘(xiang)(xiang)菜(cai)(cai)大師(shi)們精(jing)烹(peng)細調,可讓您在一桌宴席(xi)(xi)中品味湖湘(xiang)(xiang)飲食文化、感(gan)悟偉人(ren)情懷(huai)。
六味迎賓:豆(dou)椒蒸(zheng)火焙魚(yu)、紅椒腐乳(ru)、洋姜(jiang)泡蒜、擂缽藠頭、臘八豆(dou)牛肉(rou)粒、油(you)辣白肉(rou)。
十大菜:紅(hong)燒肉、三鮮菠菜、水魚裙爪、酸(suan)辣羊(yang)肉、灰湯溫泉鴨、香辣百葉、軟蒸白鰱膽、煨牛蹄筋、東安仔雞、菌燴菜心。
兩隨菜:醬(jiang)汁筍絲、蒜(suan)香大(da)片臘肉(rou)。
四(si)點心:油炸臭豆腐、蔥油粑(ba)粑(ba)、腦髓卷、雞絲米粉。

1958年4月12日,毛澤東(dong)主(zhu)席(xi)(xi)(xi)(xi)(xi)在黃(huang)克誠(cheng)將軍(jun)和(he)時(shi)任湖南省省委書記周小(xiao)舟(zhou)的(de)(de)(de)陪同下,神采奕(yi)奕(yi)地邁(mai)著(zhu)健步來(lai)到(dao)火宮(gong)(gong)(gong)(gong)殿飲食店視察。時(shi)任火宮(gong)(gong)(gong)(gong)殿公方(fang)經理何(he)炳(bing)炎(yan)把毛主(zhu)席(xi)(xi)(xi)(xi)(xi)迎接到(dao)二樓雅座。在擺臺時(shi),毛主(zhu)席(xi)(xi)(xi)(xi)(xi)起身以一個普通勞動者的(de)(de)(de)身份同何(he)炳(bing)炎(yan)一道鋪好(hao)桌布。然(ran)后,毛主(zhu)席(xi)(xi)(xi)(xi)(xi)問何(he):“火宮(gong)(gong)(gong)(gong)殿的(de)(de)(de)老人還在不在?生活過得(de)(de)好(hao)不好(hao)?長(chang)沙的(de)(de)(de)米多少錢一斤?”何(he)炳(bing)炎(yan)向主(zhu)席(xi)(xi)(xi)(xi)(xi)一一作了匯報。在點(dian)菜(cai)(cai)時(shi),非常(chang)(chang)熟悉火宮(gong)(gong)(gong)(gong)殿的(de)(de)(de)毛主(zhu)席(xi)(xi)(xi)(xi)(xi)笑著(zhu)說(shuo):“吃(chi)(chi)(chi)點(dian)家(jia)常(chang)(chang)口味,來(lai)點(dian)臭(chou)(chou)豆腐(fu)(fu),東(dong)安仔雞……就可(ke)以了。”廚房師傅聽(ting)說(shuo)是給毛主(zhu)席(xi)(xi)(xi)(xi)(xi)炒菜(cai)(cai),個個心(xin)中又驚又喜,都(dou)想拿出看(kan)家(jia)本領來(lai),一定要(yao)把飯菜(cai)(cai)做得(de)(de)合主(zhu)席(xi)(xi)(xi)(xi)(xi)口味。當端上外焦內嫩的(de)(de)(de)臭(chou)(chou)豆腐(fu)(fu)時(shi),毛主(zhu)席(xi)(xi)(xi)(xi)(xi)邊吃(chi)(chi)(chi)邊說(shuo):“火宮(gong)(gong)(gong)(gong)殿的(de)(de)(de)臭(chou)(chou)豆腐(fu)(fu),聞起來(lai)臭(chou)(chou),吃(chi)(chi)(chi)起來(lai)香。”主(zhu)席(xi)(xi)(xi)(xi)(xi)在火宮(gong)(gong)(gong)(gong)殿吃(chi)(chi)(chi)得(de)(de)很(hen)高興。臨走時(shi)對何(he)炳(bing)炎(yan)說(shuo):“火宮(gong)(gong)(gong)(gong)殿的(de)(de)(de)小(xiao)吃(chi)(chi)(chi)、湘菜(cai)(cai)很(hen)著(zhu)名,你(ni)們應(ying)該保持它(ta)的(de)(de)(de)特點(dian),火宮(gong)(gong)(gong)(gong)殿是廣大群(qun)眾喜愛來(lai)的(de)(de)(de)地方(fang),你(ni)們還要(yao)把它(ta)搞得(de)(de)更好(hao)。”
