主(zhu)(zhu)席(xi)(xi)宴是(shi)(shi)火(huo)宮(gong)(gong)殿總經理(li)譚(tan)飛先生帶(dai)領全體火(huo)宮(gong)(gong)殿人(ren),通過研究(jiu)史料(liao),走訪曾(ceng)經為(wei)主(zhu)(zhu)席(xi)(xi)服務的湘(xiang)菜大(da)廚們(men),并反復研究(jiu),多(duo)次(ci)摸(mo)索(suo)最(zui)終(zhong)成型。主(zhu)(zhu)席(xi)(xi)宴是(shi)(shi)以(yi)(yi)偉(wei)大(da)領袖(xiu)毛主(zhu)(zhu)席(xi)(xi)視察火(huo)宮(gong)(gong)殿時所品嘗的火(huo)宮(gong)(gong)殿美食(shi)為(wei)基準,結合(he)毛澤東青年時代在火(huo)宮(gong)(gong)殿吃過的小吃,以(yi)(yi)及主(zhu)(zhu)席(xi)(xi)喜愛的湘(xiang)菜,組成一席(xi)(xi)。有六冷(leng)碟、十大(da)菜、兩(liang)隨菜、四點(dian)心,有的清鮮淡(dan)雅,有的色香味(wei)濃(nong),都是(shi)(shi)原汁原味(wei)的湘(xiang)菜、湘(xiang)點(dian),經火(huo)宮(gong)(gong)殿的湘(xiang)菜大(da)師(shi)們(men)精烹細(xi)調,可讓您在一桌宴席(xi)(xi)中(zhong)品味(wei)湖湘(xiang)飲(yin)食(shi)文化、感(gan)悟偉(wei)人(ren)情懷。
六味迎賓:豆椒(jiao)蒸(zheng)火(huo)焙(bei)魚、紅椒(jiao)腐乳、洋姜泡蒜、擂缽藠頭、臘八豆牛肉(rou)粒、油辣白(bai)肉(rou)。
十(shi)大菜:紅燒(shao)肉、三(san)鮮菠(bo)菜、水(shui)魚裙爪(zhua)、酸辣羊肉、灰湯(tang)溫泉鴨、香辣百葉(xie)、軟蒸白鰱膽、煨牛蹄(ti)筋、東安仔雞、菌燴菜心。
兩隨菜(cai):醬汁(zhi)筍(sun)絲、蒜香大片臘肉(rou)。
四(si)點心:油炸臭豆腐、蔥油粑(ba)粑(ba)、腦髓卷、雞絲(si)米粉。

1958年(nian)4月12日,毛(mao)澤東主(zhu)(zhu)席(xi)(xi)(xi)在(zai)(zai)黃(huang)克誠將軍(jun)和時(shi)任(ren)湖南(nan)省(sheng)(sheng)省(sheng)(sheng)委書記(ji)周小舟的(de)(de)陪(pei)同(tong)下(xia),神采(cai)奕奕地邁(mai)著(zhu)健步來到火(huo)(huo)(huo)宮(gong)殿(dian)(dian)飲食店(dian)視察。時(shi)任(ren)火(huo)(huo)(huo)宮(gong)殿(dian)(dian)公方(fang)經理何炳(bing)炎把(ba)毛(mao)主(zhu)(zhu)席(xi)(xi)(xi)迎接到二樓雅(ya)座。在(zai)(zai)擺臺時(shi),毛(mao)主(zhu)(zhu)席(xi)(xi)(xi)起(qi)身以一個(ge)普通勞動者的(de)(de)身份(fen)同(tong)何炳(bing)炎一道鋪好(hao)(hao)桌布。然后(hou),毛(mao)主(zhu)(zhu)席(xi)(xi)(xi)問何:“火(huo)(huo)(huo)宮(gong)殿(dian)(dian)的(de)(de)老人還在(zai)(zai)不(bu)在(zai)(zai)?生活過得好(hao)(hao)不(bu)好(hao)(hao)?長沙的(de)(de)米(mi)多少錢一斤(jin)?”何炳(bing)炎向主(zhu)(zhu)席(xi)(xi)(xi)一一作了匯報(bao)。在(zai)(zai)點(dian)(dian)菜(cai)(cai)時(shi),非常(chang)熟悉火(huo)(huo)(huo)宮(gong)殿(dian)(dian)的(de)(de)毛(mao)主(zhu)(zhu)席(xi)(xi)(xi)笑著(zhu)說(shuo):“吃(chi)點(dian)(dian)家常(chang)口(kou)味(wei),來點(dian)(dian)臭(chou)(chou)豆(dou)腐,東安仔雞……就可以了。”廚房(fang)師傅聽說(shuo)是給毛(mao)主(zhu)(zhu)席(xi)(xi)(xi)炒菜(cai)(cai),個(ge)個(ge)心中又(you)驚(jing)又(you)喜,都(dou)想拿出看家本領(ling)來,一定(ding)要把(ba)飯菜(cai)(cai)做得合(he)主(zhu)(zhu)席(xi)(xi)(xi)口(kou)味(wei)。當端上外焦內(nei)嫩的(de)(de)臭(chou)(chou)豆(dou)腐時(shi),毛(mao)主(zhu)(zhu)席(xi)(xi)(xi)邊吃(chi)邊說(shuo):“火(huo)(huo)(huo)宮(gong)殿(dian)(dian)的(de)(de)臭(chou)(chou)豆(dou)腐,聞起(qi)來臭(chou)(chou),吃(chi)起(qi)來香(xiang)。”主(zhu)(zhu)席(xi)(xi)(xi)在(zai)(zai)火(huo)(huo)(huo)宮(gong)殿(dian)(dian)吃(chi)得很高興。臨走時(shi)對何炳(bing)炎說(shuo):“火(huo)(huo)(huo)宮(gong)殿(dian)(dian)的(de)(de)小吃(chi)、湘菜(cai)(cai)很著(zhu)名,你(ni)們(men)應(ying)該(gai)保(bao)持它的(de)(de)特(te)點(dian)(dian),火(huo)(huo)(huo)宮(gong)殿(dian)(dian)是廣大群眾喜愛來的(de)(de)地方(fang),你(ni)們(men)還要把(ba)它搞得更好(hao)(hao)。”
