蔣垛脆餅是江蘇(su)泰州的(de)特色名點,其實(shi),脆餅并非蔣垛專屬,整個泰州都有這道點心,只是蔣垛人一直在做,其它地方基本上看不到了。七(qi)八十(shi)年代,老家(jia)女人生了孩子(zi),親朋好友都要送月子(zi)禮的(de),禮物無非是馓子(zi)和脆餅。以后,條件好了開始(shi)送雞蛋、蹄膀(bang)等。
蔣垛脆(cui)(cui)餅(bing)特點是色澤金(jin)黃(huang),層(ceng)(ceng)次(ci)(ci)清(qing)晰,脆(cui)(cui)而不(bu)(bu)碎,油而不(bu)(bu)肥(fei),甜而不(bu)(bu)膩,香酥(su)適(shi)口。西(xi)亭脆(cui)(cui)餅(bing)選用(yong)(yong)上(shang)等精白(bai)面粉(fen)為(wei)主料,經二十八(ba)道工序,用(yong)(yong)手工制成。脆(cui)(cui)餅(bing)用(yong)(yong)微(wei)火烘烤(kao),表(biao)面黃(huang)而不(bu)(bu)焦;脆(cui)(cui)餅(bing)的工藝(yi)考(kao)究(jiu),每(mei)只餅(bing)有十八(ba)層(ceng)(ceng)次(ci)(ci),用(yong)(yong)開水(shui)(shui)泡餅(bing),則層(ceng)(ceng)次(ci)(ci)清(qing)晰可(ke)見。蔣垛脆(cui)(cui)餅(bing)有兩種吃(chi)法:干(gan)吃(chi)和用(yong)(yong)開水(shui)(shui)泡了吃(chi)。干(gan)吃(chi)則松脆(cui)(cui)香酥(su),因面上(shang)沾(zhan)有芝麻,所(suo)以越(yue)嚼越(yue)香;用(yong)(yong)開水(shui)(shui)泡了吃(chi),則鮮甜適(shi)口,特別適(shi)合老年(nian)人的胃口。
面粉加白砂(sha)糖,植物油,少量香(xiang)油,加水和在一起(qi),比做手搟面要加多點(dian)(dian)水,比較(jiao)柔(rou)軟一點(dian)(dian),然后切一塊塊的(de),再(zai)手搟成圓形(xing)的(de)薄皮狀,然后疊起(qi)來成長方(fang)形(xing),上面撒(sa)一層芝麻就行了。
