食品放冷柜冷藏注意事項
1、生鮮食材與熟食分別存放。避免生(sheng)(sheng)熟食(shi)微(wei)生(sheng)(sheng)物(wu)的交(jiao)叉(cha)感(gan)染;不要(yao)為了方便(bian),而(er)將生(sheng)(sheng)熟食(shi)混在一(yi)起存放(fang);用密(mi)封(feng)的保鮮(xian)容器分裝(zhuang)(zhuang)處理(li);利用密(mi)封(feng)的保鮮(xian)盒或保鮮(xian)袋包好食(shi)材,以杜絕微(wei)生(sheng)(sheng)物(wu)交(jiao)叉(cha)污(wu)染;防止其他食(shi)物(wu)的味道影(ying)響(xiang);不可只用塑料袋或橡皮筋包裝(zhuang)(zhuang);密(mi)封(feng)不會與(yu)空氣接觸,因而(er)不容易(yi)氧化(hua),食(shi)物(wu)也較不容易(yi)腐敗(bai)。
2、商品不宜過滿。商用冷柜(ju)存放(fang)食(shi)(shi)物(wu)不宜過(guo)擠,最好是留有一定的空隙,這樣才能讓商用冷柜(ju)中的空氣得以正常對(dui)流,以此來(lai)減輕機組的負荷。當冰柜(ju)箱體內存放(fang)食(shi)(shi)物(wu)或食(shi)(shi)品過(guo)多時(shi),應(ying)該采用隔架、隔板(ban)分開存放(fang),避(bi)免(mian)物(wu)品疊壓堆積存放(fang)。
3、拒絕過燙食物。有(you)些人(ren)喜歡將(jiang)剛剛出鍋的熟食就立馬放進商用(yong)冷(leng)(leng)柜(ju)冷(leng)(leng)卻,但這些過燙的食物如(ru)果(guo)盡(jin)早放入(ru)運轉(zhuan)著的冷(leng)(leng)柜(ju)內,很有(you)可能會(hui)減短冷(leng)(leng)柜(ju)的使(shi)用(yong)使(shi)用(yong)壽命。
4、短時(shi)間(jian)存(cun)(cun)(cun)放(fang)的食(shi)物(wu),應(ying)該首(shou)先存(cun)(cun)(cun)放(fang)在有蓋(gai)的容器皿(min)中,然(ran)后連同容器皿(min)一塊放(fang)入(ru)冰柜(ju)箱體內冷(leng)藏。較長時(shi)間(jian)存(cun)(cun)(cun)放(fang)的食(shi)物(wu)、食(shi)品,應(ying)該用食(shi)物(wu)保(bao)鮮膜(mo)或無毒塑料袋把(ba)食(shi)物(wu)包裝好(hao)后再(zai)放(fang)入(ru)冰柜(ju)箱體內冷(leng)藏存(cun)(cun)(cun)放(fang)。
冷柜冷藏食品時間
1、灌頭制品:罐頭制品的(de)存(cun)放時間(jian),除了(le)考(kao)慮保(bao)質期外,我們所說的(de)最佳(jia)存(cun)放時間(jian),一般(ban)是(shi)從開(kai)(kai)(kai)罐的(de)時間(jian)開(kai)(kai)(kai)始算(suan),未(wei)開(kai)(kai)(kai)罐,一般(ban)是(shi)一年,花生醬、芝麻醬等已開(kai)(kai)(kai)罐冷藏90天。
2、蔬菜(cai)水果:柑桔,冷(leng)藏(zang)(zang)7天(tian);梨(li),冷(leng)藏(zang)(zang)1~2天(tian);熟西紅柿,冷(leng)藏(zang)(zang)12天(tian);菠菜(cai),冷(leng)藏(zang)(zang)3~5天(tian);胡蘿(luo)卜、芹(qin)菜(cai),冷(leng)藏(zang)(zang)7~14天(tian);葉子菜(cai),最好不(bu)要挨著(zhu)冰箱放,否則會(hui)爛的(de)。
3、蛋(dan)乳制品:鮮(xian)(xian)(xian)雞蛋(dan)是(shi)比(bi)較擱放的(de)(de)食物(wu),一(yi)般(ban)放在(zai)冷(leng)藏即可,冷(leng)藏的(de)(de)最佳時(shi)間30-60天(tian)(tian),熟(shu)雞蛋(dan)不(bu)比(bi)鮮(xian)(xian)(xian)雞蛋(dan),存(cun)放時(shi)間短,而且(qie)不(bu)能放在(zai)冷(leng)凍上,最佳的(de)(de)冷(leng)藏時(shi)間是(shi)6-7天(tian)(tian)。對于牛奶(nai)的(de)(de)存(cun)貯,有(you)的(de)(de)朋友擔(dan)心牛奶(nai)不(bu)夠新(xin)鮮(xian)(xian)(xian),放不(bu)到三(san)天(tian)(tian)就扔(reng)掉了,其實在(zai)冷(leng)藏中(zhong)牛奶(nai)的(de)(de)最佳存(cun)放時(shi)間是(shi)5-6天(tian)(tian),酸奶(nai)比(bi)牛奶(nai)更要長一(yi)點,一(yi)般(ban)是(shi)在(zai)7-10天(tian)(tian)。
4、肉(rou)制品:魚類,一(yi)般是(shi)(shi)鮮魚,放在(zai)(zai)冷(leng)藏(zang)柜的(de)(de)時(shi)(shi)間(jian)(jian)(jian)就(jiu)(jiu)在(zai)(zai)1-2天(tian)(tian)(tian)(tian)左(zuo)右(you),但(dan)是(shi)(shi)如果是(shi)(shi)冷(leng)凍(dong)的(de)(de)話,就(jiu)(jiu)可以存放90-180天(tian)(tian)(tian)(tian)。牛肉(rou)跟(gen)鮮魚一(yi)樣,放在(zai)(zai)冷(leng)藏(zang)柜的(de)(de)最(zui)佳(jia)時(shi)(shi)間(jian)(jian)(jian)在(zai)(zai)1-2天(tian)(tian)(tian)(tian)左(zuo)右(you),冷(leng)凍(dong)最(zui)好不(bu)(bu)要超過90天(tian)(tian)(tian)(tian),牛肉(rou)的(de)(de)防(fang)腐能力沒有魚類強。肉(rou)排,放在(zai)(zai)冷(leng)藏(zang)柜的(de)(de)最(zui)佳(jia)時(shi)(shi)間(jian)(jian)(jian)是(shi)(shi)2-3天(tian)(tian)(tian)(tian),雞肉(rou)放在(zai)(zai)冷(leng)藏(zang)柜的(de)(de)最(zui)佳(jia)時(shi)(shi)間(jian)(jian)(jian)是(shi)(shi)2-3天(tian)(tian)(tian)(tian),冷(leng)凍(dong)的(de)(de)話270天(tian)(tian)(tian)(tian)。香腸(chang)的(de)(de)冷(leng)藏(zang)時(shi)(shi)間(jian)(jian)(jian)為9天(tian)(tian)(tian)(tian),冷(leng)凍(dong)的(de)(de)話60天(tian)(tian)(tian)(tian),但(dan)是(shi)(shi)香腸(chang)最(zui)好不(bu)(bu)要放太久。冷(leng)凍(dong)時(shi)(shi)間(jian)(jian)(jian)為一(yi)年,是(shi)(shi)所有肉(rou)類中最(zui)擱放的(de)(de)。
