米(mi)花(hua)糕(gao)是廣(guang)東省南雄的傳統特產,味道酥脆、香(xiang)甜。以(yi)前在農村,每年的臘(la)月(yue)時(shi)節,主(zhu)婦們都會制作這(zhe)道美食,用作過(guo)年招待客(ke)人(ren)的年料。因(yin)為(wei)其制作過(guo)程(cheng)較為(wei)復雜,所以(yi)現在越(yue)來越(yue)少人(ren)家(jia)制作米(mi)花(hua)糕(gao),只有一些(xie)老(lao)店依(yi)然保持著手(shou)工制作米(mi)花(hua)糕(gao)。
米花糕的味道(dao)香酥可口、又(you)甜又(you)糯,黃中帶亮,狀如(ru)蜂蛹、軟硬適中、香甜酥脆,切成一小(xiao)片(pian)(pian)一小(xiao)片(pian)(pian)吃,這樣的味道(dao)會更加好。
它是用(yong)(yong)精白(bai)糯米(mi)(mi)(mi)(mi)(mi)蒸(zheng)熟,倒入竹制“大模”用(yong)(yong)濕(shi)布(bu)覆(fu)嚴實,三(san)朝(即(ji)三(san)日)打開,手(shou)抹花生油一小把一小把地(di)將成(cheng)(cheng)團(tuan)的(de)糯米(mi)(mi)(mi)(mi)(mi)飯擦(ca)散(san)成(cheng)(cheng)粒(忌成(cheng)(cheng)團(tuan)),然后曬干(gan)。這些準備(bei)工(gong)(gong)作一般(ban)都(dou)在收冬后進(jin)行。農(nong)歷十二(er)月初開始加(jia)工(gong)(gong)米(mi)(mi)(mi)(mi)(mi)米(mi)(mi)(mi)(mi)(mi)呈(cheng),其(qi)工(gong)(gong)序一般(ban)分(fen)為(wei)四(si)個(ge)步驟:將米(mi)(mi)(mi)(mi)(mi)干(gan)再曬一個(ge)響午(wu);進(jin)入第(di)二(er)工(gong)(gong)序即(ji)入鍋炒胖(用(yong)(yong)海沙(sha)入鍋加(jia)火燒熱);米(mi)(mi)(mi)(mi)(mi)干(gan)起鍋反復用(yong)(yong)手(shou)摩擦(ca),并用(yong)(yong)糠篩(shai)把沙(sha)篩(shai)出成(cheng)(cheng)干(gan)凈米(mi)(mi)(mi)(mi)(mi)干(gan),此為(wei)第(di)三(san)工(gong)(gong)序;第(di)四(si)道工(gong)(gong)序則(ze)是煮白(bai)糖,同時把米(mi)(mi)(mi)(mi)(mi)干(gan)跟花生米(mi)(mi)(mi)(mi)(mi)、黑芝(zhi)麻等混(hun)合均勻(yun),待(dai)白(bai)糖煮至(zhi)適當火候(hou)(煮糖時加(jia)入一點檸檬酸、麥芽(ya)、蜂蜜(mi)),迅速(su)滅火,將米(mi)(mi)(mi)(mi)(mi)干(gan)倒入另備(bei)好的(de)鍋內快速(su)拌(ban)勻(yun)出鍋,入木制格內搬平,用(yong)(yong)木制碾筒壓(ya)平碾實,用(yong)(yong)刀切成(cheng)(cheng)方塊或小長條,即(ji)成(cheng)(cheng)米(mi)(mi)(mi)(mi)(mi)干(gan)米(mi)(mi)(mi)(mi)(mi)呈(cheng)。食來香脆爽口、清甜(tian)無(wu)比。
俗(su)稱菽(shu)子。菽(shu)子成(cheng)(cheng)串(chuan)(貓尾(wei)般狀)收成(cheng)(cheng)后脫粒去殼(ke),蒸熟曬干、碾白(過去用木碓石(shi)重白)。加(jia)工過程跟米(mi)干米(mi)呈一樣。是迎接(jie)貴客之上品。仔細嚼(jiao)來,滿口生香,余(yu)味(wei)無(wu)窮。
普(pu)通稻谷用水浸透放入大鍋燜熟,曬干,脫(tuo)殼(ke),炒(chao)成(cheng)胖米。加工程序(xu)與(yu)上(shang)同。
米(mi)花糕是南(nan)雄民間大眾化傳(chuan)統食(shi)品,以前過(guo)年期間大街(jie)小(xiao)巷(xiang)好多制(zhi)作(zuo)炒米(mi)糖(tang)的,現在(zai)做(zuo)的人(ren)兒也少(shao)了(le),基本上是機(ji)器制(zhi)作(zuo)。過(guo)去(qu),米(mi)花糕此三種米(mi)米(mi)呈(cheng)(cheng)在(zai)民間,可以說是貧(pin)富之象征。較富裕(yu)家庭必有(you)"米(mi)干米(mi)呈(cheng)(cheng)"或"小(xiao)米(mi)米(mi)呈(cheng)(cheng)",而一般家庭或較貧(pin)窮(qiong)者也只能有(you)普(pu)米(mi)米(mi)呈(cheng)(cheng)且數量相當有(you)限。
