米花糕(gao)是廣東省南雄的傳統特產(chan),味道(dao)酥脆、香甜。以前在(zai)農村,每年(nian)的臘月時(shi)節,主(zhu)婦們都(dou)會制作(zuo)(zuo)這道(dao)美(mei)食,用作(zuo)(zuo)過(guo)年(nian)招待客(ke)人的年(nian)料。因為其制作(zuo)(zuo)過(guo)程較為復(fu)雜,所以現在(zai)越來(lai)越少人家制作(zuo)(zuo)米花糕(gao),只有(you)一些老店依(yi)然保持著手(shou)工制作(zuo)(zuo)米花糕(gao)。
米花糕的味(wei)道香(xiang)(xiang)酥(su)(su)可(ke)口、又(you)甜(tian)(tian)又(you)糯(nuo),黃中帶亮,狀如蜂蛹、軟硬適中、香(xiang)(xiang)甜(tian)(tian)酥(su)(su)脆,切成一(yi)小(xiao)片(pian)(pian)一(yi)小(xiao)片(pian)(pian)吃,這(zhe)樣的味(wei)道會更加好。
它是(shi)用精(jing)白糯米(mi)(mi)(mi)(mi)蒸熟,倒入(ru)(ru)(ru)(ru)竹制“大模”用濕布覆嚴實,三朝(即(ji)三日)打(da)開,手(shou)(shou)抹(mo)花(hua)生(sheng)油一(yi)(yi)小把(ba)一(yi)(yi)小把(ba)地將成(cheng)(cheng)團(tuan)的(de)糯米(mi)(mi)(mi)(mi)飯擦散成(cheng)(cheng)粒(忌(ji)成(cheng)(cheng)團(tuan)),然后(hou)曬干(gan)。這些準備工(gong)(gong)(gong)作一(yi)(yi)般都在收冬后(hou)進行。農歷(li)十二月初開始(shi)加(jia)工(gong)(gong)(gong)米(mi)(mi)(mi)(mi)米(mi)(mi)(mi)(mi)呈,其工(gong)(gong)(gong)序一(yi)(yi)般分為四個步(bu)驟:將米(mi)(mi)(mi)(mi)干(gan)再曬一(yi)(yi)個響午;進入(ru)(ru)(ru)(ru)第(di)二工(gong)(gong)(gong)序即(ji)入(ru)(ru)(ru)(ru)鍋(guo)(guo)炒胖(用海沙入(ru)(ru)(ru)(ru)鍋(guo)(guo)加(jia)火燒熱);米(mi)(mi)(mi)(mi)干(gan)起鍋(guo)(guo)反(fan)復用手(shou)(shou)摩擦,并用糠篩把(ba)沙篩出成(cheng)(cheng)干(gan)凈米(mi)(mi)(mi)(mi)干(gan),此為第(di)三工(gong)(gong)(gong)序;第(di)四道工(gong)(gong)(gong)序則是(shi)煮白糖,同(tong)時把(ba)米(mi)(mi)(mi)(mi)干(gan)跟花(hua)生(sheng)米(mi)(mi)(mi)(mi)、黑芝麻(ma)等(deng)混合均勻,待白糖煮至適當火候(煮糖時加(jia)入(ru)(ru)(ru)(ru)一(yi)(yi)點檸(ning)檬(meng)酸、麥芽、蜂(feng)蜜),迅速(su)滅火,將米(mi)(mi)(mi)(mi)干(gan)倒入(ru)(ru)(ru)(ru)另備好的(de)鍋(guo)(guo)內快速(su)拌勻出鍋(guo)(guo),入(ru)(ru)(ru)(ru)木制格內搬平(ping),用木制碾筒壓平(ping)碾實,用刀切成(cheng)(cheng)方塊(kuai)或小長條,即(ji)成(cheng)(cheng)米(mi)(mi)(mi)(mi)干(gan)米(mi)(mi)(mi)(mi)呈。食來香脆(cui)爽口、清(qing)甜(tian)無比(bi)。
俗(su)稱菽子(zi)。菽子(zi)成(cheng)串(chuan)(貓尾般狀)收成(cheng)后脫(tuo)粒去(qu)殼,蒸熟(shu)曬干(gan)、碾白(bai)(過去(qu)用木碓石重白(bai))。加工(gong)過程跟(gen)米(mi)干(gan)米(mi)呈一樣。是迎接貴(gui)客(ke)之上品。仔細嚼(jiao)來,滿口(kou)生(sheng)香(xiang),余味無窮。
普通稻谷(gu)用(yong)水浸透(tou)放入(ru)大鍋燜熟,曬干,脫殼,炒成胖米。加工程序與上同(tong)。
米(mi)(mi)(mi)(mi)花糕是(shi)(shi)南雄民間(jian)大眾(zhong)化(hua)傳統(tong)食品,以前過年期間(jian)大街小巷好多制作炒米(mi)(mi)(mi)(mi)糖的,現(xian)在做的人兒(er)也(ye)少了,基本上是(shi)(shi)機器制作。過去,米(mi)(mi)(mi)(mi)花糕此三(san)種米(mi)(mi)(mi)(mi)米(mi)(mi)(mi)(mi)呈(cheng)在民間(jian),可以說(shuo)是(shi)(shi)貧(pin)富(fu)之象征。較(jiao)富(fu)裕家庭必有"米(mi)(mi)(mi)(mi)干米(mi)(mi)(mi)(mi)呈(cheng)"或(huo)"小米(mi)(mi)(mi)(mi)米(mi)(mi)(mi)(mi)呈(cheng)",而(er)一般(ban)家庭或(huo)較(jiao)貧(pin)窮者(zhe)也(ye)只(zhi)能有普米(mi)(mi)(mi)(mi)米(mi)(mi)(mi)(mi)呈(cheng)且(qie)數量相(xiang)當有限。
