良質咖(ka)啡(fei),因(yin)品種和工(gong)藝不同而呈棕色到深褐色,組(zu)織(zhi)狀(zhuang)態為2毫米左右(you)大(da)小的不規則(ze)顆(ke)粒,夾雜(za)有(you)部分細粉(fen)末;劣(lie)質咖(ka)啡(fei),色澤(ze)深暗,有(you)的呈鐵黑色,組(zu)織(zhi)狀(zhuang)態上(shang)因(yin)受潮或其(qi)他原因(yin)而有(you)結(jie)塊、結(jie)團現象。
良(liang)質咖(ka)啡,溶(rong)解完(wan)全,湯汁(zhi)色棕紅(hong)而明亮,具有(you)濃(nong)(nong)郁的咖(ka)啡香,加(jia)糖后具有(you)適口的苦味(wei)(wei)和酸(suan)(suan)味(wei)(wei),風味(wei)(wei)爽直;劣質咖(ka)啡,溶(rong)解后杯底(di)有(you)沉淀物(wu),湯汁(zhi)顏色偏暗,香氣淡且(qie)焦糊味(wei)(wei)濃(nong)(nong),加(jia)糖后苦味(wei)(wei)和酸(suan)(suan)味(wei)(wei)均濃(nong)(nong)重,尤其是(shi)回味(wei)(wei)辛苦。
