三、毛尖泡出來為什么是紅的

1、陳茶
毛尖經過(guo)長時間(jian)的(de)儲存,它所含茶(cha)(cha)綠素會(hui)因時間(jian)而逐(zhu)步(bu)的(de)降低,毛尖的(de)茶(cha)(cha)黃素,與(yu)空(kong)氣氧化,就會(hui)令茶(cha)(cha)湯茶(cha)(cha)變紅,很多陳(chen)茶(cha)(cha)是泡(pao)不出碧綠清(qing)澈的(de)茶(cha)(cha)湯也正是這個原(yuan)因。
2、變質茶
毛尖會(hui)發生變質,特別是(shi)在濕熱條(tiao)件(jian)下,最容易導致茶多酚與空(kong)氣接觸,使茶黃素變成(cheng)了茶紅(hong)素,泡(pao)出(chu)來的茶湯自然不會(hui)是(shi)綠色,而變成(cheng)了紅(hong)色。
