3、蓮蓉月餅的做法
食材
主料:面粉200g、轉化糖漿140g、植物油45ml
輔料:蓮蓉餡500g、枧水適量、蛋黃1個、蛋清5g、水適量
廣式蓮蓉月餅的做法步驟
1.轉化糖(tang)漿、油(you)、枧水拌勻,倒入面粉中(zhong)和(he)成面團(tuan),餳1-2小時。
2..分(fen)割成10個劑(ji)子(zi)。
3..制成圓形(xing)狀。
4.蓮蓉餡(xian)分成10份(fen),團成圓形。
5.取一個劑(ji)子,按(an)(an)扁放入蓮(lian)蓉餡。 用手虎(hu)口慢慢向上推,最(zui)后把口收(shou)嚴實,用月餅模(mo)子按(an)(an)壓成型。
6.做出來的(de)月餅坯(pi)子。
7.烤箱180度預熱(re),先(xian)烤5分鐘(zhong),取出來刷(shua)蛋黃液(ye)。
8.用160度再烤20分鐘(zhong),取(qu)出(chu)來晾(liang)涼。
9.切開一個,看里邊的餡料夠(gou)足吧。
