東(dong)(dong)(dong)(dong)江(jiang)(jiang)菜(cai)(cai)(cai)(cai),又稱(cheng)客(ke)家菜(cai)(cai)(cai)(cai),以惠州(zhou)菜(cai)(cai)(cai)(cai)為(wei)代表,屬(shu)于客(ke)家菜(cai)(cai)(cai)(cai)的水系(xi)流(liu)派(pai),東(dong)(dong)(dong)(dong)江(jiang)(jiang)鹽焗雞、東(dong)(dong)(dong)(dong)江(jiang)(jiang)釀(niang)(niang)豆腐、梅菜(cai)(cai)(cai)(cai)扣(kou)肉等(deng)聞名(ming)遐邇,東(dong)(dong)(dong)(dong)江(jiang)(jiang)菜(cai)(cai)(cai)(cai)已(yi)成(cheng)(cheng)為(wei)東(dong)(dong)(dong)(dong)江(jiang)(jiang)文(wen)化特色中不可缺少的組成(cheng)(cheng)部分。東(dong)(dong)(dong)(dong)江(jiang)(jiang)菜(cai)(cai)(cai)(cai)歷史(shi)悠久,考古發現,四五千年前東(dong)(dong)(dong)(dong)江(jiang)(jiang)流(liu)域的先(xian)民已(yi)大量食(shi)用(yong)河蜆;唐宋時期大批貶官(guan)謫(zhe)徙惠州(zhou),在(zai)客(ke)觀上(shang)促進了(le)中原文(wen)化包括飲(yin)食(shi)文(wen)化在(zai)惠州(zhou)的傳播與影響;明清時期,惠州(zhou)作為(wei)東(dong)(dong)(dong)(dong)江(jiang)(jiang)流(liu)域商品(pin)(pin)的集(ji)散地,商業(ye)、飲(yin)食(shi)業(ye)得(de)以進一(yi)步發展(zhan),東(dong)(dong)(dong)(dong)江(jiang)(jiang)鹽焗雞、東(dong)(dong)(dong)(dong)江(jiang)(jiang)釀(niang)(niang)豆腐由(you)此成(cheng)(cheng)為(wei)東(dong)(dong)(dong)(dong)江(jiang)(jiang)菜(cai)(cai)(cai)(cai)的招牌。改革開放后,東(dong)(dong)(dong)(dong)江(jiang)(jiang)菜(cai)(cai)(cai)(cai)吸收了(le)全(quan)國各地菜(cai)(cai)(cai)(cai)式(shi)的優點,傳統菜(cai)(cai)(cai)(cai)也得(de)到進一(yi)步挖掘和發展(zhan)。在(zai)一(yi)批名(ming)廚的努力下,東(dong)(dong)(dong)(dong)江(jiang)(jiang)鹽焗雞、惠州(zhou)釀(niang)(niang)春、瀝(li)林(lin)碌鵝等(deng)特色東(dong)(dong)(dong)(dong)江(jiang)(jiang)菜(cai)(cai)(cai)(cai)品(pin)(pin)紛(fen)紛(fen)亮(liang)相(xiang)中央、省和海外傳媒,東(dong)(dong)(dong)(dong)江(jiang)(jiang)菜(cai)(cai)(cai)(cai)步入(ru)了(le)空前繁榮的新時代。
惠州市(shi)的(de)(de)特(te)色小(xiao)吃比較偏向于(yu)“糍、糕”類(lei),如沙糕粄(ban)、大籠粄(ban)、發糕、阿(a)嬤叫、粽子等惠州傳(chuan)統的(de)(de)風味小(xiao)吃。
惠(hui)州(zhou)地處珠江三角洲,依(yi)山傍(bang)水。優越的(de)(de)地理(li)位置(zhi)使惠(hui)州(zhou)物產繁多,嶺(ling)南佳果品種齊全,山珍海(hai)味應(ying)有盡有。其中,有不少是惠(hui)州(zhou)所獨有的(de)(de)土特產品,成(cheng)為(wei)海(hai)內外(wai)游客必購(gou)的(de)(de)珍品。比如惠(hui)州(zhou)梅菜、羅浮山酥醪萊、羅浮山百草油、羅浮山甜茶、東江糯米酒、南昆山觀音菜、龍(long)門(men)(men)竹筍、龍(long)門(men)(men)竹牙簽、荔枝等。
